Bedtime Blueberries…

I’m tired as I type which reminds me to remind you that getting adequate sleep is more important than anything you might accomplish by staying up too late working on what “must” get done.  If we deprive ourselves of precious recovery time, life simply becomes less enjoyable as we continue to burn out emotionally and physically. Not to mention the scientific proof that lack of sleep is an underlying cause of many health issues and has been linked to the likes of increased cancer risk (especially in women) to fun stuff like depression.  So get your Zs people!!

Now for some food fun.  Check out this blog by Katie at Norcal – a recipe I have not yet tried but wanted to share anyway because it just sounds so tantalizing!!  Also, here’s a blueberry creation I just popped into the oven tonight for a fun bedtime snack for the kids.  Enjoy!

Bedtime Blueberries

2 cups frozen organic blueberries

1/2 cup unsweetened finely shredded coconut

1/2 cup sliced almonds

4 tbsp freshly squeezed orange juice

Preheat oven to 350. Layer the blueberries in a pie pan and sprinkle the shredded coconut evenly over the blueberries, followed by the sliced almonds. Drizzle the entire dish with the orange juice and bake for 15 minutes.  Finish under the broiler on high for another minute or until the almonds start to brown.

    Wow, looks easy and delicious! Quick question, do you store you nuts (almonds/walnuts/etc) in the pantry or the freezer?? I feel like when I purchase a bag of almonds from Trader Joe and store it in the pantry it tastes stale not to long after opening.

    1. I actually keep my nuts in the freezer and they last a longtime. Does not change the taste and they do not need to really be defrosted.

    I store my nuts in the freezer to keep the fresh, they do get stale fast in the pantry….

      Trader Joe’s nuts almost always taste stale and/or rancid. I recommend finding a fresher source.

    What is a broiler?? What can you do if u don’t have that?

      Hi Katie,
      Most standard ovens come with a broiler. Some are in the oven, some older ovens have them in the drawer underneath. For mine, I set my food on the top rack of my oven and there is a broiler button on the front, sometimes there’s a nob that let’s you set it on high or low, and it’s just direct heat coming straight down on your food. Great for browning something quickly or cooking steak or chicken under – kind of like the bbq idea but in the oven! If you don’t have one, just bake it for a few extra minutes, it will still be delicious!!

  10. This recipe wound up not so good. Dry and not very sweet. The next time I make it, I’m going to let the blueberries thaw first so there’s more juice. Either that or use more orange juice or add some apple juice. With just a bit of tinkering I’ll have the dryness solved!

    So sorry it didn’t turn out for you! Maybe it was the brand of blueberries?? It was really good when we made it, and not dry at all!!

  12. That’s OK Sarah, I think I figured out a way to fix it that’s an improvement. Take the Blueberries, add the coconut and pop in the oven. While they are ‘cooking’, take Coconut oil and put that into a non-stick pan. Add the Almond slices, coconut (and I know this isn’t Paleo but I did it anyway) added about two tablespoons of brown sugar. I cooked the almonds, coconut and sugar in the coconut oil for about ten minutes until the coconut and almonds were getting that toasted look. Pulled the blueberries and coconut out of the oven, scooped the toasted stuff out of the pan on top and ‘Voila’….bedtime blueberries!

    When I do the recipe this way, the dish doesn’t come out dry. It’s probably as a result of cooking in the coconut oil.

    I made this yesterday and it was really good. I could only find sweetened coconut at my store though. Didn’t thaw the blueberries either.

    My husband, who doesn’t eat Paleo, said ‘THAT was good!’ It was very easy too! I made it at the same time as the egg muffins.

    I made this (came out super juicy for me) AND the coconut tortillas you linked. Rolled the bluberries in the torillas and voila, I had blueberry crepes as a desert 🙂 When our strict Paleo Challenge is over, I plan on drizzling these with raw honey for a little added sweetness.

    Do you worry much about sulfites in your shredded coconut as long as it’s unsweetened. I can’t find sulfite-free coconut anywhere.

      I buy the Red Mill brand of unsweetened coconut – no sulfites! Not sure where you live but I find mine at my local health food store or at Raley’s, also known as Nob Hill. : )

    Hey I am new to Paleo..would it be ok to leave out the coconut? Also. is freshly queezed orange juice just squeeze the juice from oranges?

      Hi Heather – so so sorry it took me forever to respond! You can try leaving the coconut out, I’m sure it will be fine, and yes freshly squeezed orange juice is just squeezing it right from the orange! : )

    So yummy and easy!! I was out of shredded coconut so I sprinkled organic coconut flour on it and it came out amazing! It was real hot when I pulled it out but I couldnt wait to eat it so I drizzled coconut milk over it to cool it down. Totally fixed my cereal/yogurt and fruit craving, so creamy and delicious!     Just wondering….do you soak your raw almonds before you eat them?

    1. I don’t but to tell you the truth, I eat them very rarely these days but if I ate them more often I would for sure soak them. Much better for you and easier to digest.

    Blueberries and almonds go together so well. I eat steel cut oats (Irish oats) maybe, once a month if that as a rare indulgence. I love to add blueberries and almond butter. Since I have been eating 95% Paleo I was in the mood for it the other day so I just mixed Almond butter and blueberries together! Wow!… Wow!!… Quick, fast, and delicious. I’ll have to give this recipe a try to.

    Do you think another kind of nut (I’m thinking walnuts that I’ve soaked and dehydrated) would work instead of almonds??

        Thanks! Had this for breakfast this morning. I added cinnamon and also after it was done, added a tsp of coconut cream and a dash of vanilla and stirred it all together. It was pretty good and very satisfying with the walnuts. THANKS for a yummy breakfast!

    Just have a couple of questions about this… I am new eating Paelo. Would this keep in the fridge for a couple of days?

    Also, I read that if you are going to be eating almonds, to soak them first. How long do we need to be soaking them for.

      Hi Michelle, Yes, I think bedtime blueberries will keep, but will lose some of the original crispiness of when you first take it out of the oven… May become mushy, but that may still be yummy ?! Give it a try! Yes, soaking almonds is a great idea and cuts down on troublesome acids.
