Blackberry Cobbler

I love the seasonal fruits and veggies of summer.  This time of year in Chico you’ll find a fresh fruit stand on almost every corner.  On my way home from the gym yesterday I pulled off the road to one of the stands and picked up an abundance of strawberries, blackberries, and cherries.  I knew the blackberries would go bad before we could eat them all and the first thing that came to mind was cobbler…  Here’s what we came up with.

Blackberry Cobbler

3 cups of fresh blackberries

1 1/2 cups almond meal (finely ground almonds)

1 omega 3 enriched egg

2 tbsp coconut oil

A drizzle of raw organic honey

Cinnamon to taste

“So Delicious” coconut milk

Preheat oven to 350. Pour the blackberries into a pie pan.  In a small bowl mix together the egg, almond meal, and coconut oil, and shake in a bunch of cinnamon.  Stir well.  The mixture will be really thick and clumpy.  If you wish, drizzle a bit of raw organic honey on top of the blackberries.  By hand (or if you have a 2 year old to help you, that works just as well…) crumble the almond meal mixture on top of the blackberries and bake in your pre-heated oven for 35 minutes.  Serve in bowls with cold “So Delicious” brand coconut milk poured over the top.  Yes, it’s addicting, but life’s too short to not eat cobbler now and then…

    YUM!!! In our kitchen, blackberries usually end up in an all-frozen-fruit smoothie with strawberries, pineapple, bananas, raspberries and whatnot, but I will try this one for sure. Thanks, Sarah!

    This sounds amazing! I’ve just started experimenting with coconut flour. Think you could sub coconut flour for the almond meal in this and other recipes?

      You could try it – it would give it a whole different flavor. I liked the almond meal because of the nutty taste with the berries was a great compliment!

    I made this and it was GREAT!! I do think that I would increase the fruit:topping ratio though.

    I made my own coconut milk topping by taking a can of regular coconut milk, adding half a can of water and about 4 TBS of honey. My wife doesn’t really like coconut milk, but loved this for a topping!

    Quick question, what would I do to change the recipe if I wanted it to a peach, apple or cherry cobbler instead, is there a conversion to change the recipe for the those fruits instead. If you cant tell not a fan of blackberries.

      Hey Daron! I would just use the same amount of any other fruit instead of the blackberries. I did this cobbler with bluberries the other day and it was great! Peaches would be awesome too. If you use peaches, I would actually double the amount, peal the peaches and chop into bite size pieces, and mix the pieces with a couple tbsp of cinnamon and then top with the almond meal crumble. I’m going to try that myself!!

      I’m so glad you are enjoying the blog! As far as the almonds, I would suggest using them raw before you blend them. If you have a vita mix or a food processer, that’s the best. Good luck!

      Hey Brian,
      When I am making my own almond meal I just use raw almonds, and no I don’t peel or blanch them or anything. I just toss them into my food processor. Most of the time I but already prepared almond meal from Trader Joe’s. You can also typically find almond meal or almond flour at most health food stores and even safeway and raleys in the health food section carries it as well.

      Hi Hannah!
      I haven’t tried it yet myself but I would suggest using coconut flour in place of the almond meal. You might need to adjust the amount of liquid (maybe less). Let me know if you try it and how it turns out!

    Oh. My. Goodness. This cobbler was AMAZING! I used blueberries and made a whipped cream out of coconut milk, vanilla and cinnamon to go on top. It was so good, my brain was simply not convinced that I was only eating some fruit, almonds, a little honey, egg and coconut. I can’t wait to try this with like every summer fruit I can think of!     Is there a substitute for the almond meal? I went to the grocery today it was 15$ for a small bag of almond meal, seems a bit much. Hopefully the health food store has some…

      HI Sam,
      Not sure where you live, but if you have a Trader Joe’s around, you can buy almond meal there for half that price, in fact I think it’s closer to $5 a bag. If not, you can also make your own almond meal by simply throwing a bunch of almonds in a food processor or blender until they are finely ground. A substitute, although I’m not sure how well it would work for this recipe, would be coconut flour, but honestly it’s typically more expensive than almond meal.

      I’m glad you like the website, and don’t worry, I won’t stop posting recipes!! : )

      Yes you can use frozen berries! I made this cobbler with frozen blueberries for a dinner party a few weeks ago and it turned out great.

  22. I just read The Paleo Diet and he says not to use coconut oil which surprised me…and makes no mention of coconut or coconut milk. I hope it is legal. Cant wait to try some of your recipes.

      Coconut oil is excellent and legal, I suggest you pick up Robb Wolf’s new book Paleo Solution – lots of great up to date paleo info!

    Hi – I’ve just found your blog and these recipes look great! I’d like to try this, but my kids are terribly allergic to eggs – any ideas for a sub for that? Thanks!

    1. Hi Destiny, I would try subbing a little bit of coconut milk, organic butter, or even just coconut oil. If you can add just enough liquid to get the almond meal to hold together, but not be like a batter, just crumbly, I bet it would work fine without the eggs! Give it a shot with the butter or the coconut oil and see how that works! I may try it myself, I bet both would add a nice flavor to the almond meal as an added bonus.

  24. I tried this recipe today for a party and it was a major hit! I made some modifications so it would feed more people – about 6.5 cups of berries, 4 tbs coconut oil, 3 eggs and 3 cup sliced almonds which I processed. It filled my 9 x 13 pyrex perfectly.

    1. The carton is a beverage the can is a cooking ingredient. Kinda like trying to cook with milk when the recipe calls for butter.

    Made this last night for dessert. We had to use half blackberries and half blueberries. I also used canned coconut milk. I like the thickness and the coconut flavor it has so much better than the carton one. It was so good!! It reminded me a bit of warm cereal in the morning. I think when we are craving warm cereal, I will be making this.

  31. Just made this tonite and loved it! I used vanilla almond milk instead of the coconut milk and it was fantastic. First helping was thicker – like a cobbler should be….second helping I ate more like a bowl of cereal and loved it!

    Sarah, I just received your book yesterday and while flipping through I noticed several of the recipes call for almond meal. Are you aware of any substitutes for almond meal? I’m dying to try the “Berry Good Cobbler” especially, but my daughter is allergic to nuts (all that we’ve tried so far).

    I made this to recipe the first time and loved it, then i decided to try to jazz it up and added a white peach to the blackberries. I also sprinkled cinnamon on top of the “crust” before baking. Instead of using coconut milk the second time, i topped it with a little bit of Blue Diamond Original Almond milk, it is a little sweeter than the cocnut milk and pairs nicely with the almond flavor of the crust and sweetness of the peach. All in all i liked the second time around much better, the peaches were sinfully healthy!

  34. Another hit in the household. We made the cobbler last night with the berries we had on hand, blackberries, strawberries and blueberries. The house smelled so good while this was cooking. We were all thinking of ideas of what we might like to add next time or how we could modify for other types of fruit. Very yummy!! This was probably a lifesaver since my husband has been craving some sort of comfort food. This gave him a treat without deviating from our newly found paleo lifestyle.

    I tried this recipe using peaches with coconut flour, since I did not have any almond meal and it was well…boring. So I purchased some almond meal and WOW, my family and I loved it!! It was delicious warm with the coconut milk and the next day it was just as delicious cold straight out of the pan. Thank you Sarah for such wonderful healthy recipes!

  37. I made this tonight and it was yummy. Question about coconut oil… should you melt it before using. I used it as a paste and it formed wax balls in the “crust” mix. Maybe that is the point, but I’m a little new to the “oil” that’s not liquid out of the bottle.

    1. I usually melt my coconut oil first prior to using it with baked goods but having it formed into little wax like balls for this crust is normal since it’s more of a “crumble” than a “crust.” : )

        I melted the coconut oil. I wasn’t sure what to do with it since it wasn’t specified. Is the “crumble” supposed to be crunchy or soft?
        It was delicious even if I did it wrong! lol I used frozen mixed berries: blueberries, strawberries, blackberries and raspberries. Yummy!

    I know you can use coconut flour as a substitute for almond flour, but has anyone successfully made this with coconut flour? I am allergic to nuts and I have not successfully been able to do the conversion right as coconut flour is WAY more absorbent than almond flour is. I totally wrecked the Paleo Apple Muffins trying to substitute. Can anyone help? Either with a recipe or conversion equation that they have found works? Thanks!

    Very yummy! I tried it with blueberries. Next time I think I’d smoosh the berries a bit first. I ended up with whole warm blueberries under the crust – still yummy but it didn’t really say “cobbler” to me.

    P.S: In regards to the coconut oil, I didn’t melt it on my own before putting it into the almond meal…but its 80 something degrees here in Georgia, so the heat did it for me! It was still good though!

  44. Delicious!! I was scouring for a perfect recipe and this fit the bill! I used fresh peaches and blueberries and added a little vanilla to them and then used coconut nectar rather than agave – once the crumble was on top, i also drizzled a little nectar over it and cinnamon (as another post suggested), it came out nice and crispy! Thank you for the recipe!

    This was so delicious.! I added pecans to the topping and used butter from grass fed cows instead of coconut oil, and frozen blueberries. Thanks for the easy delicious recipe.
