Coconut Adventures!

Coconut milk should be a staple in the paleo kitchen.  Coconut milk is a good fat, and tastes delicious as a base for just about anything!  I made lunch yesterday in about five minutes: Pour 1 can of coconut milk into a pot, add a couple handfuls of shrimp, shredded cabbage, and broccoli.  I seasoned the whole pot with a 21 seasoning blend from Traders but you can use any combination of spices to make this dish different every time and also any kind of protein can be used as well.  I simmered it all together for about 5 minutes and for Rowan, I served it over sweet potatoes.  I had enough leftover for a after school snack for Jaden.  Our coconut adventures continued into the evening when later on at Raley’s, Jaden saw coconuts in the veggie isle and asked if we could try “real” coconut milk!  There is a photo collection below of our adventures.  I’ll say this, I think you have to be a CrossFitter to get into an actual coconut!!  The kids helped me make dinner – lettuce tacos.  So easy.  Cook ground (preferably grassfed beef) add cumin, chili powder, a little cayenne, sea salt and pepper.  Cut up a ton of veggies – we use radishes, purple cabbage, green onions, avocado, olives and tomatoes.  Wrap in lettuce leaves and enjoy!

    I bought coconut milk when I first started eating paleo but hadn’t done anything with it until lunch today. I made your recipe substituting zuccini for the broccili. I’m in heaven. This is such a delicous meal. I made enough for lunch today and dinner tonight. Thank you Sarah!

    I read in the Farmer’s Almanac once that you can break open a coconut by placing it on a cookie sheet and placing it in the oven on 400 degrees for 10 minutes. So I went to the grocery story and tested this theory. When I threw it in there, I totally forgot all about it and it started to smell. I lost all the milk, but but to my surprise, it toasted the meat! Voila! Instant Toasted Coconut!

    Oh and as a side note, it’s coconut water inside the fresh coconut. You get milk by shredding the meat, soaking in water and squeezing out the “milk” through a cloth. I watched my grandpa do this all by hand with a shredder he built himself so that grandma could make delicious treats with it. Man was it a LOT of work! Wish I had more than just mental pictures.

    The best way to get the meat out of the coconut….after you drain it. Continue with a screw driver to break it in half/pieces, then put the coconut in the refrigerator for 1 hour…the coconut lifts right out.

  13. I am so happy I discovered you!! Haha I’m currently transitioning into a Paleo lifestyle (well i have been eating fairly accurately for a while now without having known about being Paleo; being dairy-free, recently finally giving up cheese, etc) and getting my mum who I live with on board with me. I have noticed that you shop a ton at TJs which makes me super pumped since I do too; makes following your recipes all that much easier >;) I have a question though, where do you get your canned coconut milk from, and are you loyal to any particular brand? I haven’t been able to find any and have been using So Delicious unsweetened coconut milk (which I already love) as a substitute in all my recipes. Thanks for all you do!! your little ones are darling.

      Hi Sam, so glad you discovered me also!! : ) I like Native Forest, Thai Kitchen, or Chaokoh. I buy Native Forest at my local health food store and Thai Kitchen or Chaokoh usually at most major grocery stores. Hope that helps!
