Cooking Demo – Paleo Tacos with Purple Cabbage Slaw

Hi Everyone!  Check out the latest Everyday Paleo Cooking Demo!!!

Purple Cabbage Slaw

3 cups purple cabbage, chopped

1 cup cucumber, chopped

1/3 cup purple onion, finely chopped

1/2 cup green mango, diced

3 tbsp olive oil

2 tbsp balsamic vinegar

Cracked black pepper to taste

Mix all ingredients together in a large mixing bowl.

Taco Meat

1 lb grass fed ground beef

1 tbsp garlic powder

1/2 tsp black pepper

1 tbsp cumin

1 tbsp chili powder

1/4 cup green salsa

Brown meat, add seasoning and salsa, stir and eat on a lettuce leaf topped with the purple cabbage slaw, avocado, and fresh cilantro.

    Do you have a recipe for the green salsa?

    1. Hi Amanda, I used the salsa verde from Trader Joe’s. But I make my own green salsa too and it’s super easy. Just use 6 tomatillos – first place them in a skillet – no oil – rotating often until the skin starts to blacken. Through them into a food processor with 1/2 a jalapeno, about 3 cups of cilantro, the juice from 1 lime, a little bit of sea salt, and some pepper. Pulse until smooth!

    I love all these recipes that are for wraps or variations (tacos/tortillas), but what I can figure out is how to eat them with out the lettuce falling apart? = )

  3. These demos are great! I think it’s so nice to see your son helping out in the kitchen and as a result, is probably pretty on-track with paleo-eating. He seems to be pretty excited to be there.
    Also, I’m so glad you kept pointing out that just because you’re in a hurry doesn’t mean that you can’t stay paleo. I’ve heard quite a bit that “it’s hard to stay paleo when you’re in a rush” or something along those lines.

    I love wrapping things in nori sheets! While not exactly a taco replacement, it is good for chopped liver, avocado and veggies….Maybe a chicken salad.

    Love the use of Trader Joe products, makes life so much easier!! BTW: Do you find you need to drain the fat from the ground meat when using grass-fed? My husband insists I still drain it when I make meat sauce or anything.

      Hi Tracey,
      I don’t ever drain the fat when I’m cooking grass-fed – it would feel almost sinful… ; ) Also, I find that there is never really that much fat to drain because the meat is so much leaner!

    I love the Paleo Tacos with purple cabbage!!! Delicious. I used ground elk instead of ground beef, a great way to use up elk from last year. Hopefully, we’ll be stalking our freezer, with elk, again soon 🙂 Thanks for the recipes, everydaypaleo.com is great!

  15. At first I wasn’t sure about having mango on my tacos, but it turns out this recipe is soooo good. The mango adds a perfect bit of sweetness to the slaw. Great work!

        Question: is a green mango just an unripened regular one, or a special kind… haven’t found green mangoes anywhere except dried at Trader Joes and they have sugar in them…

          There is actually such a thing as a green mango but kind of hard to find so just use a regular old mango. I need to change that so it’s not so confusing.

    I finally tried this recipe! It was so delicious, my husband and I almost at the whole thing for dinner. The only change I did was replaced mango for pineapple. It was so great!     We just made this last night. Before I made these my boyfriend did not think that they would be good at all. His comment was, you can’t have a taco without cheese and cabbage does not go with taco beef. Well he loved it and probably ate 2lbs worth. it was delicious. This is going on my regular meal list.     I’m on my first few days of seriously trying paleo/primal living and just made these tonight. It was HARD to stop at two. I can’t wait for my husband to get home from work and try these things. SO GOOD. I did it without mango since I’m being careful with carbs for weightloss, but I can imagine how great it would taste with that touch of tropical sweetness.

I made this for dinner tonight and I really loved it – it was so fresh tasting, and the only thing that would have made it better is to use fresh garlic in place of the garlic powder – I love that your recipes are simple enough for everyday so I ordered your book – am anxious to try some of your other recipes 🙂

    Wow! I tried this recipe on boston lettuce leaves. THis was fabulous! My five year old said they were the best tacos ever (although she had hers on corn tortilla as did my husband who are still a bit rebellious to the Paleo cooking I have been serving up. But this is a great recipe for flexibility like that too. They are being given less grains which is a start at least, and they have to eat more veggies and fruits. This recipe is perfect for pleasing both worlds with a few tweaks on the extras. I personally love how having a burger, sandwich or taco on lettuce really brings out the flavor of the filling. I have been Paleo for three weeks, and after just a few days (I started gradually to avoid the sugar crash/withdrawl) I felt so much more positive and energetic. This recipe and others like it will make it a cinch to keep with it! Thank you, thank you!
