Everyday Paleo Gazpacho with Avocado Cream

I received a bunch of heirloom tomatoes in my CSA box this week and while gazing at them on the counter along with a few fresh cucumbers, beautiful purple bell peppers, and big red onions, I became inspired to make a gazpacho!  YUM was the end result and so refreshing on a hot day.  We topped the gazpacho with some paleo avocado cream for a deliciously rich addition to the bowl of goodness.  Here it is!

Everyday Paleo Gazpacho with Avocado Cream

Ingredients

  • 4 large tomatoes diced or aprox 4 cups
  • ½ medium red onion diced
  • 1 cup cucumber diced
  • 1 cup sweet bell pepper diced
  • 1 cup fresh cilantro - reserve some for garnish
  • Small piece of a jalapeno or more if you like it spicy
  • 2 garlic cloves
  • 2 teaspoons ground cumin
  • Sea salt and black pepper to taste
  • Splash of balsamic vinegar

Avocado Cream

  • 2 ripe avocados
  • ¼ cup fresh cilantro
  • 1/2 cup full fat canned coconut milk
  • Juice from ½ a lime

Instructions

  1. In a blender or food processor, add all the gazpacho ingredients and blend until totally smooth.  Remove the gazpacho from the blender and place in the fridge to chill.  Now, blend the avocado cream ingredients together until totally smooth.
  2. Serve the gazpacho in bowls topped with a spoonful of the avocado cream and garnished with diced cilantro.

  2. Got to try this one – the avocado cream sounds like a perfect match!

    The typical portuguese ‘gaspacho’ recipe skips the cumin and balsamic vinegar – but mixes in olive oil, white wine (or apple sider) vinegar and dried oregano.

    Also, try blending some peeled almonds in the gazpacho, makes it super smooth and creamy!

    Sarah, is the full fat canned coconut milk in this recipe the same kind you recommend making your smoothies with from your cookbook? Please advise. Thanks.

      I often use the So Delicious brand coconut milk for my smoothies but I also like the canned kind as well. For this recipe however, I would recommend using the canned coconut milk.

    My husband and I are just starting with the Paleo lifestyle. Any tips on keeping fresh herbs on hand? They can get expensive! I can grow things like basil and rosemary, but flat parsley and cilantro can be hard to grow here in the south.

  18. I thought the gazpacho was tasty…but the raw garlic and onions were kinda strong and everyone could smell it (ie maybe don’t take it to work for leftovers!) I used the avocado cream on EVERYTHING, though, from hamburger patties with salsa to scrambled eggs. Yummy!!

    I’m definitely wanting to try the avocado cream, but have a question about the coconut milk. When using the canned milk, and the recipe doesn’t specify using just the cream off the top, do you mix the liquid and cream together and then add to recipes?
