Fun-Burger!!

Last night’s dinner, if anything, was pure fun.  The boys did most of the work as I supervised and the mess was nothing short of epic!  I should have taken a picture of the “aftermath” but as I stated on my Facebook page last night, life’s too short to do anything but embrace the craziness!  I wouldn’t call this post a recipe but more of an idea of how to get the kids involved and an example that the typical Monday night paleo burger can be just about anything but boring!  What can your family come up with?

Fun-Burgers!

2 lbs grass fed ground beef

Sea salt, black pepper, and garlic powder to taste

5 eggs, fried

10 bacon strips

4 sweet potatoes, grated

1 pound of broccoli florets

Coconut flour drop biscuits

Lettuce mix, sliced dill pickles and tomato slices

Mix the ground beef and spices together and form into hamburger patties and set aside. Fry the bacon, remove from the pan and set aside.  Shred the sweet potatoes in a food processor or with a cheese grater.  Fry the grated sweet potatoes in some of the bacon grease.  While the sweet potatoes are cooking, pan fry your burgers, about 4 minutes per side.  Remove the burgers from the pan, set aside and fry the eggs in some grass fed butter or coconut oil.  Of course you should have several children helping with all stages of the process and somehow in the middle of the above madness, mix up and bake some of the coconut flour drop biscuits and throw the broccoli on a cookie sheet, drizzle with coconut oil and bake at 400 with the biscuits for about the same amount of time.

My kids stacked up their Fun-burgers like towers and dove in! Little Rowan wanted his burger deconstructed and ate all of his burger parts separately.  The point is, good food never has to be boring and getting the kiddos involved, although sometimes hectic and messy is well worth the extra few minutes spent cleaning up and the memories of being together and having fun will last a lifetime.

  1. Eating Paleo has required us to be adventurous with mealtime. It occurred to me how we often eat the same things over and over but that eating can be so much more and varied than we sometimes allow!

    Great looking burgers. Having recently cut out dairy and eating low carb for the last 6 months, Paleo seems to just make a lot of sense to me.

    Just wanted to pass on this yummy cauli-rice recipe. So tasty with your green curry chicken on top!
    1 head cauliflower
    olive oil
    garlic
    salt & pepper
    Throw the cauliflower florets in the food processor (a little at a time) until it is finely chopped up. It almost looks like rice. Heat some olive oil or coconut oil in a large frying pan, add garlic and onions or whatever spices you like. Add the ground up cauliflower and saute for about 5-8 minutes. So delicious, and has the same sort of consistency as rice.

    Sarah – I’m curious what brand of bacon you use. I’m having trouble finding bacon without added sugar (cane sugar or brown sugar). Is there such a thing?

    1. I’ve found that good butchers can provide — I’ve got one in town that can do it for sure, another that I honestly haven’t asked (but their chorizo is pretty clean — meat and spices, basically). Find one and ask, and if they can’t provide it, maybe they can direct you to a local provider — I’ve got all sorts of farms around here I could go to to find it, and some that come from farther up the island to hit the weekly market.

      Mind you, I live (literally) on the side of a mountain, but I think that just means in a city you have more butchers, yes?

      Hazel, I believe Sarah uses bacon from Trader Joe’s (saw it in a few previous posts…here’s one with a pic of it: http://everydaypaleo.com/2010/12/14/what-are-you-chasing-and-of-course-a-recipe/). Uncured Applewood, no nitrates or nitrites added…I use the same kind 🙂

      Hi Hazel,
      I’m all over the place with my bacon! I sometimes buy it from our farmers market, sometimes there’s a guy at my CSA who is selling pasture raised pork, and sometimes I but share of pork from a friend of ours who raises hogs, and often I buy if from our local butcher or from Trader Joe’s. I think it’s really hard to find bacon that has zero sugar but typically it’s a very small amount and as long as you are not living off of bacon, I wouldn’t worry about it too much. Hope that helps!

    I just made a batch of the coconut flour drop biscuits and they are so good. I had one with some almond butter … Unbelievably tasty! Thanks for sharing. Do you use honey in yours? I used a small amount of organic grade B maple syrup (not the 1/4c the recipe calls for). I’m just wondering.

    Hey Sarah! Made these tonite and loved ’em!! I was really excited about the drop biscuits until I checked on them …aack! they all turned into one big blob! Not sure what went wrong 🙁 but still made the best of it and just used a cookie cutter. Fabulous!     After taking a bite of the drop biscuits, my husbands says,”Are these macaroons? Scones? Pancakes? Oh, I don’t care what they are. They’re awesome!” My son said, “How much dinner do I have to eat before I can have one?” He didn’t believe me when I told him they were PART of dinner. SO GOOD!
