Jaden's Frittata Creation!

The kids are on spring break this week and it’s been nice to avoid the usual hectic morning rush and sleep in a little bit! This morning, after John left for work, it was only Jaden and I who were awake so he created this frittata to share with his brothers and with all of you!

Jaden’s Frittata Creation

1 cup diced ham

1 small yellow summer squash, diced

1 cup finely diced broccoli florets

1/2 cup finely diced sun dried tomatoes packed in olive oil

1/2 cup finely diced red onion

7 eggs, whisked

Sea salt and black pepper to taste

Coconut oil

1. Preheat oven to 375.

2. In the bottom of an oven proof 10 inch skillet, melt a big spoonful of coconut oil over medium heat.

3. Add the onions and broccoli and saute until the onions are translucent.

4. Add the squash, ham, and sun dried tomatoes and saute together for another 4-5 minutes or until the squash is tender. Evenly spread the mixture over the bottom of the skillet.

5. Whisk together the eggs and pour them over the veggie/ham mixture in the skillet, turn down to medium low and cook until you see the edges firming up around the frittata.

6. Transfer the skillet to the preheated oven and cook for another 10-12 minutes or until the frittata is set all the way through. You can finish it under the broiler on low for a minute or two if you like.

7. Slice like a pizza and enjoy!Β Serves 3-4

      It’s like a zucchini but it’s yellow. You can just use a zucchini.

  11. Oh my goodness this looks great. I’ve made plenty of healthier versions of a crustless quiche, but never something like this (particularly with summer squash and sun-dried tomatoes).

    I sprinkled a few bacon bits and sliced olives on the top if this right before I put it under the broiler. After one bite of the frittata, my 5 year old son said, “Mom, this is so good I’m making up a song about it! Super yum, yum, yummy. Super yummy yum!”. Then we played the “guess how many vegetables you just ate” game and when I got to broccoli, he said, “Broccoli!? I didn’t even know I liked broccoli!?”

    I also have a “Jaden”. He is 16 months and while my husband and I are die hard paleo, I am having such a hard time getting my Jaden to eat solids that are also paleo. Its not like he has alternatives, he just won’t eat something and then nurses A LOT!
    Any tips on yummy enticing things I can try?
    Note: While typing this he was offered a grass fed organic beef hot dog and is chewing away at it…..

      Tell your Jaden hi for me and give him a big squeeze!! A guy this little, it’s kind of expected that he won’t love everything you give him the first time, and it’s ok if he doesn’t have a widely varied diet at this age, especially when he’s still nursing. Try sweet potatoes, chicken and other protein that’s easy to chew (cooking it in the slow cooker does the trick!), ground beef, winter squash, avocados, eggs, canned salmon, blueberries, and kids that age LOVE to dip things so you can make avocado dip by pureeing the avocado with some coconut milk and some spices so that it’s easy to dip and I also make “ranch dressing” with homemade mayo, a little bit of coconut milk, dried parsley, dill, onion powder and salt and pepper. In my family cookbook coming out in July I have a bunch of other dip options as well that should be fun! Don’t worry, and don’t put a lot of focus on any food aversions he might have, just keep offering him what you are eating, and don’t fuss about it and he’ll come around!!

    We made your frittata this morning, Jaden, and it was fantastic. We had to substitute sausage because we were out of ham, and my son decided to add black olives on top to make it look like a pizza. Great recipe. Keep ’em coming!

    hey- can i make this same recipe in a 9×13? saute the veggies in coconut oil then pour into the 9×13, add the whisked eggs ,then cook? i need something to make on sunday and easily be able to have ready to cut in the mornings before i leave for work. thanks for your help!

  20. I didn’t have the same ingredients on hand but it inspired me to make a sausage, pepper and onion frittata! I added left over roasted green chilies to it and it’s in the oven as we speak! Thanks guys! πŸ˜‰

Lelan, if you notice this seems to be on ongoing problem with food refusal and pickyness as he gets to be older, you may want to have him evaluated by Occupational therapist for sensory issues or sensory integration disorder. This creates feeding problems and often picky eaters. My son has high functioning autism and will still gag on some foods- mostly veggies (he drinks them in smoothies). Lots of kids get sensory issues. Paleo is definately the best diet for them as it is anti inflammatory. Most occupational therapists can either help with feeding therapy or refer you to a place that does that. Our local children’s hospital has one. They help the children get over their sensory adversions or other issues to broaden their diets. Of course, he will likely outgrow this, but something to think about if he doesn’t.
