One Crazy Week = Nutty Cookies

Every week is crazy, this one especially so – faced with a deadline to finish the cover of my book plus a photo shoot for the fitness section, plus the three kids, two dogs, and well – life in general.

We relied this week on some good old standbys that I’ll share with you later in this post. Today, I found myself with a little down time in which Rowan and I whipped up some “cookies” with what we found left in the kitchen after our nutty week. These are not super sweet but they are SUPER tasty.  This is a great after school snack for the kiddos and easy for toddlers to snack on as well.  Plan ahead this weekend – make a big batch and your little guys and gals will have healthy and delicious snacks to take along while on the go!

 

Nutty Cookies

Ingredients

  • 2 bananas smashed
  • 1/3 cup coconut flour
  • 3/4 cup almond butter
  • 1/2 tsp baking soda
  • 1/3 cup raw walnuts
  • 1 apple finely chopped
  • 1/3 cup coconut milk
  • 1 tbsp cinnamon or more if your 2 year old is measuring...

Instructions

  1. Preheat oven to 350 degrees.  In a medium mixing bowl, use a fork to smash the bananas to baby food consistency.  Add the coconut flour, almond butter, and baking soda and mix well.  Using a hand held chopper or food processor, chop the walnuts and apples to a very fine dice.  Add the walnuts, apples, coconut milk, and cinnamon to the bowl and mix in remaining ingredients.  Cover two cookie sheets with parchment paper and spoon heaping tablespoons of the cookie mix onto the parchment paper, placing an inch or two apart.  Back for 25  minutes.  Makes approximately 20-22 cookies.

 

We survived this week on lettuce tacos, a spin off of this recipe but I added curry powder, turmeric, garlic powder, a little cardamom, and mixed with some mashed sweet potatoes and topped with fresh cilantro, and a crock pot chicken similar to this one with one small can of El Pato hot sauce added to a whole chicken rubbed with sea salt and garlic powder.  I threw in sliced onions, carrots and celery and called it a day. A fast breakfast earlier in the week was leftover steak from the weekend (chopped small for the little guy) with an awesome melon I found at the farmers market, a cross between a honey dew and a cantaloupe.

    I know you get a lot of props, but thought it is always nice to hear more. I switched to paleo three months ago. I had been on the fence for months, but knew that after a year of doing CF I needed to take the leap. I found your blog one evening and it completely inspired me to make the change. I have not regretted a single minute of it. I have completely changed my body composition (last bit of baby fat gone! Nice crossfit muscles were already there waiting to show off!) I feel fantastic and have no desire to go back to my old ways. My husband after years of battling losing some wait has also completely transformed his body. All headaches are gone, and I love of the take charge attitude of deciding what I put into my body instead of blinding shopping the grocery store and having big marketing firms tell me what I should be buying for my family.

    WEll I couldn’t wait to try these since I didn’t have an egg in the house and this recipe didn’t call for one:) My dough was quite a bit more loose than yours shows and maybe that is because I tried Almond flour instead of coconut flour which I have never seen in the store. so where do you buy coconut flour. Does whole foods or trader jo’s have it? The batter is delicious and my first runny batch is in the oven as I type, I hope they turn out and if they don’t I will have a fabulous mess to eat with a spoon:):)

    They are out of the oven and my house smells amazing. I wish my kids weren’t in school they would be freaking out that mom made cookies. They did turn out super well in spite of the loose batter-shocker!! And they are super good! I think they are plenty sweet with out added sweetners beyond the fruit. Thank you for the recipe~

    Recipe mentions a measurement of almond butter. Later I see almonds to be included but the amount is not stated. I used 2/3rds almond butter and 1/3 c of almonds crushed in the food processor. Are we to use almonds along with almond butter?

      Oh shoot, in that sentence that mentions find dicing the walnuts and almonds – I was supposed to say walnuts and apples! I just fixed it, I’m so sorry – but I’m sure they hopefully turned out great for you anyway! They are nutty cookies, and I guess yours will just be extra nutty! Sorry about that!

    I made your cookies yesterday and wow! So amazing. My husband and I have been doing Paleo for 6 months now and have dropped a combined total of 57 pounds. He doesn’t like coconut and was complaining that he wasn’t going to like the cookies because they have coconut flour in them. Well, low and behold, look who ended up gobbling them up and talking about how amazing they are.

    These are fabulous! I didn’t have walnuts so I substituted Pecans and they tasted like banana bread. Even my husband, who doesn’t like any cookies unless they have sugar in them, said they were good and he’d eat more than one. I LOVE them.     These came out delicious! Another plus, if your child has ever looked longingly at the bowl because they wanted to eat the raw dough but you were hesitant because of raw eggs, well…in this recipe (which smells like heaven, btw) they can eat the raw dough too!

    I made these last night and they taste great but they crumble when you eat them. I used extremly light coconut milk i found at whole foods (its like 40 calories for a cup) do you think that was my mistake?

      Hi Alexis! The light coconut milk might have made them more crumbly – I go for the real deal but I have also used the So Delicious coconut milk and they have turned out ok. Did you make sure they cooled before you ate them? They are a bit crumbly but shouldn’t totally fall apart… : )

I used the So Delicious coconut milk, which I thought was real. So what is “real” coconut milk? How would I identify it? How is is different from the So Delicious? Thank you!

    These cookies are awesome! My husband and kidlets loved them too! We call them ‘caveman cookies’ a little wink to the Paleo name. I added macadamia nuts, (instead of walnuts) an egg, a little coconut oil (1tbsp.) because I was just a smidge shy of the 3/4 cup almond butter, and some chunky shaved coconut. How many of these are legal to eat at one time on the Paleo diet? There is just no way you can have only one. I have just crossed over to this way of eating and love it. Thanks for the great recipes and inspiration!

    1. Hi Kerry! Well, the “legal cookie limit” all depends on you and what your goals are my dear. If you are lean and otherwise healthy, you can probably get away with a few more nutty cookies than if you are wanting to lose weight. When I make these cookies they go pretty fast so honestly, they are more of a treat at our house than an everyday thing. Hope that helps!

  32. Made these yummy cookies tonight! They were a great treat to end the fun spring break our family had! We added cashews instead of walnuts since that was what we had. I may try this with cashew butter instead of almond butter next time around since my son is not to fond of almonds but LOVES cashews. =)

    I made these last night using the pumpkin substitution and added dairy-free dark chocolate chips. This morning we went to a scholarship breakfast at my daughter’s high school and I came prepared. The breakfast buffet, as I expected, was pastries, bagels and fruit. My husband and I loaded up on fruit (lots of berries!), and I had hidden in my purse four nutty cookies (perfect for breakfast on the go), as well as some green tea, so we were able to enjoy a lovely paleo breakfast.     Thanks for the base! Because I was being a little lazy and had already washed enough dishes for the night, I ended up kind of adapting this to only use the food processor. Turned out well, but here’s how it went down …

    Apple and walnut in food processor. Pulse pulse pulse. Bananas and coconut flour added, more pulse-y pulse. Almond butter, baking soda and cinnamon added – pulse! Hmm. This is pretty thin, I think I’ll skip the coconut milk …………………

    Added some raisins just cuz, and baked. Although the dough (more of a batter, really) seemed thin, they didn’t flatten out. Kept their shape just fine and darned tasty. Probably would have been a little better nutritionally with full fat coconut milk to balance out the bananas and apple, but oh well … my 12 year old just started trying Paleo and he’s been quite a trooper, I just wanted to make him a treat.

    I’m just learning about the Paleo diet so I’m still in the research process. It sounds like what I want to do so that my kids and I are eating healthier. I haven’t found the answer yet, but I’ve noticed you use coconut flour and milk for this recipe. Where do you find ingredients like that? I live in a small town so I only have a Walmart and a couple of chain grocery stores — Kroger and Marsh. I’m not sure any of them will have these. Thanks!

  40. These cookies are so tasty! Thank you for the recipe. I was wondering if they need to be refrigerated after baking due to being made with the almond butter? Has anybody tried freezing them? If so, how did they turn out after they thawed? Thanks again! Fantastic website, such great ideas! Life changing recipes and advice…

      I typically put mine in an airtight container and then in the fridge after we make these. I have not tried freezing them, but if you do, maybe put a piece of parchment paper in between if you are stacking them to freeze, I could see them really sticking together otherwise. : )

    Wow, these cookies are to die for!!! I have been doing Paleo for 5 weeks and haven’t lost a single pound. My husband has lost 10 and looks and feels amazing. I have 8 lbs away from my goal weight and am still nursing 2x a day, so I’m guessing the weight is holding on for that reason. I do however feel better all around and during allergy season my allergies were a 1 on a scale from 1-10, 10 being the worst. I started eating this way during allergy season and only have been supplementing with bee pollen. It’s amazing what a little diet change will do.
    Thanks again!!! I added peach apple sauce since I only had a banana and a half and 3 dates instead of an apple since it’s not apple season. I used the coffee grinder to grind the dates and walnuts, YUMMMMMM!!!!

    My oven tends to be super-powered so I only baked them for 23minutes. They turned out delicious but were always a bit soft … if I bake them the full 25minutes can I expect them to be a little more crisp or firm? I also didn’t store them in the fridge after so they never got a bit softer with time! Next time I’ll put them in the fridge or freezer!

    I just made your cookies with sweet potato flour (in place of coconut flour) and they were delicious! I found this flour at Wholefoods. I recommend trying out this variation if you haven’t already.

  48. Hmm… my dough looked just like yours but they turned out darker on the outside and uncooked in the centers. The 2nd sheet I lowered the oven temp and baked longer but had the same problem. Anyway my 2-yr likes them and since I’m only in my second grain-free week and still craving all the bad stuff, they are certainly making me happy!

      It could be that you made the cookies too large, but please also remember that you are using real food and not flour and these will not be like Toll House cookies in texture. : )

    These cookies have quickly become a favorite in our house! For some reason, the Silk brand of coconut milk seems to work best in these.. at least for us.
