One Final Thanksgiving Treat Recipe and Being Thankful

I am thankful for All Of You! Thank you so much for taking the time to read my little blog. Everyday Paleo is a labor of love and I am humbled and honored to share my recipes and ideas that hopefully help make your life a bit more manageable.

I am thankful for the folks who have given me the resources to figure out how to live a healthy paleo lifestyle. Without these people, and you know who you are, I would still be wondering what to do with my life, and I would still be unhealthy!

I am thankful for my children.  No one else in the world can make me as crazy, happy, and proud than my three boys. Coby, Jaden and Rowan, you make my life bright and filled with an infinite amount of joy.

I am thankful for my husband. Since I have known John he has never once doubted me and he has always been my biggest fan. John radiates love, he can always make me laugh, and John treats everyone he meets with a sort of gentle kindness that only comes from a person of true heart and integrity. To make sure all this mushy stuff doesn’t embarrass him too much, I’ll also clarify that John is a total bad ass athlete, strong as an ox, and amazing to watch whether he’s playing a game of softball or throwing around some serious weight in the gym.

I cannot begin to list ALL that I am thankful for in fear that you would stop reading, but my family, dear friends, and loved ones, you are all at the very top of my list.

My wish for all of YOU this week is simple. May you use your knowledge about health and wellness by making choices that are best for you and your family. Feel good about those choices, whatever they may be!  Make a decision to enjoy yourself and enjoy the week rather then letting the week get away from you. Do not fall into that awful place of feeling deprived but be PREPARED and bake an Everyday Paleo Pumpkin Pie to bring with you to grandmas so you can have a treat. Or, make this awesome cookie recipe by my amazing friend Laura.  John claims that these are the BEST paleo cookies he has ever eaten, and I would have to agree! Laura, we are eternally grateful for you and the joy you bring to our lives, and to top it all off, your cookies are out of this world!

Laura’s Amazing Cookies!!

1 cup of almond meal

1/2 cup finely chopped walnuts

1/2 tsp baking powder

1 tablespoon cinnamon

1 egg

1 cup of cooked and mashed yam, pumpkin, or butternut squash

¼ cup coconut milk

2-4 tablespoons maple syrup

Preheat oven to 400. In a mixing bowl, stir together all the dry ingredients.  In another small mixing bowl whisk together the egg, coconut milk, and maple syrup.  Add the wet ingredients to the dry ingredients and mix well.  Add the mashed yam, pumpkin, or squash to the dough and mix well.  Grease a baking sheet with coconut oil or organic grass fed butter and scoop about one heaping tablespoon per cookie onto the baking sheet and bake for 20 minutes.  Makes approximately 15 cookies.

    Sarah.. You are a true inspiration.. Especially on cold and rainy morning like today! The bikeride to work was a cold 10km and when I started my browser I turned to everydaypaleo.com right away.. It brought the smile back to my frostbited face 🙂

Even though we don’t celebrate Thanksgiving in the Netherlands, I still think it’s a wonderful idea to put all the madness on hold and take a moment to consider what you are truly grateful for. I think it’s something we should all do every once in a while. So – apart from a very long list of other things I’m grateful for – let me just say that I’m grateful for having stumbled upon your blog and for all the effort you put into it.     Just so you know…there are plenty of us out here in the world who are very thankful for all you do! You have taken something that seemed like an impossible way to live and made it look easy!!! Can’t wait for the book, more people need to know that this can be done – no matter how busy or crazy our lives get!!!

    I am so happy to have found your blog by chance! I have just started Crossfit and many of the athletes in there that I admire are on the Paleo diet. It still seems like a huge leap for me, I am a huge “foodie” and it will be really hard to cut out so much at once, so we are baby stepping our selves to see how it work for us. It is encouraging to see someone who is also a mom being so successful at it. I am excited to try out the cookies and your recipes!

  14. The cookie recipe says 1 c of yams and pumpkin or squash. Does this mean 1c of yams plus 1c of pumpkin?

      I read it to be one cup of any one of the three. You could use one cup of pumpkin, one cup of yam or one cup of squash. It’s up to you to choose which one.

      No, I would never recommend soy milk. If you want to use a sub, try almond milk, but soy is really not good for you. http://paleodietlifestyle.com/dangers-soy/

  20. My family and I have been Paleo for 9 weeks now. I didn’t bake any “sweets” until this past week. Unfortunately, we did not enjoy these cookies or the Apple Cinnamon muffins. I believe the almond meal is overwhelming in both recipes. I did however make a muffin recipe with coconut flour, and was pleased with the results. I think I’m going to try that with this recipe the next time I make it, because we love pumpkin!! I will definitely try more of your recipes here, as we have loved many of the dinner ones. Thanks so much and keep up the great work! =)
