Rockin’ Moroccan Chicken

This is a quick stir-fry that is delicious, subtly spicy, and a lot of fun!

What you’ll need:

4 cooked and diced chicken breasts

1 head broccoli chopped

1 bag of baby carrots chopped

handful of green olives or garlic stuffed olives sliced

small handful of raisins

a few splashes of chicken broth

cinnamon

ground ginger

cumin

cayenne pepper

sea salt

olive oil

Cover the bottom of a saute pan with olive oil.  Saute broccoli and carrots until crisply tender and add chicken.  Cover chicken with cinnamon, add two or three big dashes of ginger, two or three dashes of cumin, a dash of cayenne pepper (more if you like it really spicy), a dash or two of sea salt, and stir.  Once the chicken and veggies are covered with the spices add the sliced olives and raisins and a few splashes of chicken broth to create a sauce.  Simmer until all the flavors meld together (about 5-7 minutes) and serve!!

    I can’t thank you enough for this website.

    I’m the proud husband of a home-schooling mom and proud father of a 5yo and 3yo.

    In all of our free time, we try to fit in CF and want desperately to eat paleo. More often than not, time and resources are significant barriers. (no trader-joe’s, no costco, farmer’s market 4 months out of the year, and one –only one– REALLY big walmart!)

    You may have saved my marriage! =)

    Excellent recipe! I didn’t have a couple of things and winged it slightly. My family is gluten, soy, and corn free due to allergies and we’re trying Paleo to help my teenage son bulk up (severely underweight due to recent celiacs diagnosis). Anyway…. I used up a bag of stirfry veggies instead of the suggested veggies, used 1 tsp cinammon, 1/2 tsp of the other spices, handful of walnuts and a 1/2 can of coconut milk instead of chicken broth. So good! There were no left overs!

  4. Sarah, thank you so much for the blog. I am slowly changing from a highly processed/ fast food diet to a paleo style diet. I understand the basic concepts, what to eat, what not to eat, etc. I have a much harder time with the everyday implementation of these concepts. I’m not a natural meal planner or super creative with food. Having a resource like this is so helpful and makes me feel more confident that I can succeed with my lifestyle food changes.   5. I made this dish tonight for myself and two others ( I should have used more broccoli (3-4 heads)). But the flavor of all the spices was great!

    I made this dish last night and although hubby was initially throwing the sauté pan rather worried glances, he only needed one bite to devour it nearly all (I was lucky enough to save me a plate). Next time, I will add some more broccoli. We’re not real fans of that veg, but this dish transformed it into something quite delectable. Thanks, Sarah!

    I made the recipe in your cookbook, which had a few differences (i.e., it specified 1 Tbsp cinnamon, 2 tsp cumin and 1 tsp ground ginger). It pains me to say this because I have loved every single one of your recipes so far (and I have made dozens!), but this one was NOT yummy. We ate half and then threw out the rest. Now that I look at the recipe as posted on your website, I am wondering if the measurements in your cookbook were typos? E.g., too much spice or not enough veggies. I don’t think I will risk trying it again, though, as my hubbie was particularly grossed out 🙁

    Honestly, though, Sarah, you are my hero 364 days of the year! keep doing what you do!

      I’m so sorry it did not turn out for you! I did revamp some of the recipes a bit in my book that are also on my blog but this one has been a huge hit with many of my followers and with my family! Again, I’m sorry, not sure what went wrong, but the measurements are correct! Bummer!!

      1. So it is correct that it calls for 1 tablespoon of cinnamon and not a teaspoon? I just bought your book and made this last night and it was not one of our favorite either. I might give it another try with much less cinnamon.

          I received Everyday Paleo as a Christmas gift from my daughter and son-in-law and love it! My husband and I have been living this lifestyle since. Unfortunately, we both completely agree with Georgia and Pam. This is not a keeper for us either but it is the only one we have tried thus far that we really didn’t like.

      2. I too made the recipe from the cookbook the combination of the spices to be wonderful, but the chicken and vegetables tasted like they were just covered with dry spice. It had a displeasing texture – looking as well as tasting very gritty. I think I’m going to try substituting the chicken broth with coconut milk as recommended by another poster. Maybe it’ll help the sauce be a bit creamier.

  9. Yum yum yum!! My family and I officially began our paleo lifestyle transformation on 08/01/11 and picked up your book among others as part of getting ourselves ready. My husband flagged your Rockin’ Moroccan Chicken as his first pick and we made it last night. I have to say that so much of the paleo lifestyle for me is incorporating the whole family, playing together, prepping together, enjoying life together. I just had to smile as I watched our 8 year old daughter measuring out spices (it was fun turning it into math since we decided to double the recipe) and my husband chop veggies as I cooked the chicken. It really was a very beautiful thing to work side by side with my family and much like the meal watch it all blend into something yummy. We doubled the recipe so that we would have leftovers for tonight freeing us up to go play together after work today. I even had enough to bring a bowl for lunch today. My coworkers commented about the wonderful smell as I warmed up my lunch. A very colorful, beautiful combination of great foods. We are already brain storming about what we could add next time we make it… getting inventive and creative. Just gotta love that!

    I think I love you.
    I just started cooking healthier for myself, my daughter and my boyfriiend. First meal I tried was the Pecan Crusted Chicken…an absolute hit in my house!! Sooo good!
    How can I get my hands on your cookbook?

    I have to agree with Georgia that this dish was not as yummy as others in the cookbook (eg Butter chicken is now a go-to dish). It had a gritty feel to it because of the quantity of ground spices, especially cinnamon. I’m wondering if adding tomatoes would make it thicker and saucier.

  12. We made this tonight, and we also thought the 1Tbsp. Cinnamon was a typo. There was too much cinnamon and you cannot really taste the other spices. We made a note in our cookbook to reduce it to 1 tsp.

    Also, since the size of chicken breasts vary so much, it would be helpful to have the number of pounds/ounces of chicken, and also the measurement of vegetables in cups. We were wishing we would have added more vegetables.

    We love the cookbook. Last time we made the ginger citrus skillet chicken and it was amazingly good! So was the roasted curried cauliflower.

    I made this tonight. It was good. I cut back on the spices because that much cinnamon just seemed like it would over power everything! I was right, even cutting in half it was a little stronger than I would have liked and a bit gritty. Good over all though. I have found that many of the recipes in the book call for more spice than I would use. My husband does not have as adventurous of a pallet as I do so heavy use of spices is a no go here.
