Salad Fun!

One thing I love about eating paleo; as long as you have some protein, veggies and some good fats anything is possible!  For lunch yesterday I threw together a salad that was tons more fun than the standard lettuce and chicken.  It was a “kitchen sink salad” of sorts, I tossed together everything in the kitchen but the kitchen sink! Below is what I put in my version and I’m sorry that some of the measurements are not spot on but that is what will make this recipe your own!  Get creative and let me know what YOU come up with!

The Kitchen Sink Salad

4 chicken breasts, cooked and diced

4 hard boiled eggs, cooled and diced

1/2 head of purple cabbage, diced

1 English cucumber, diced

1/2 head broccoli, finely chopped

Handful of sliced almonds

1/4 cup of flat leaf Italian parsley, diced

Lots of olive oil

Splash of balsamic

Squirt of spicy brown mustard

A few shakes of dried dill

Lots of black pepper

A bit of sea salt

Toss all ingredients together and eat!

I also pressure cooked some beets that we sliced and ate along with the salad

Pressure Cooked Beets

To pressure cook beets, place the whole washed beets into the pressure cooker, add about 1-2 cups of water, bring to pressure and cook for approximately 12 minutes.  Once done, the skins pull of easily and you can slice and serve.

    Man!!! I really need to get a pressure cooker!!!

    1. I finally got a pressure cooker so I can cook the quick delicious meals like she does. I recommend Fagor Futuro (has a high and low setting).

          I have a husband and 3 kids too, so I’m looking at buying one of the bigger pressure cookers. Can I still use it for smaller things or does it have to be relatively full like a slow-cooker?

          I have just started Paleo and everyone in my family is so on board with this. I have 3 kids, 6, 4 and a 10 month old. I am excited, but has been a bit time consuming (in a good way) since I’ve been trying to cook in a whole new way. I do have a couple of questions. I was wondering what size of a pressure cooker you would suggest to feed a family of 5? Also, I am looking to purchase a slow cooker and wondering what brand and size you would recommend as well? My last question, if you don’t mind me asking, what is your estimated monthly food budget? Purchasing meat (especially meat), fresh veggies and fruit can add up. I know that it has already substituted a lot of junk we have gotten rid of like crackers, breads, etc. but it seems like a lot?
          I know this will all pay off in the end and we (my husband and I are committed to this lifestyle).
          Thanks so much for your blog! If it wasn’t for stumbling across this, I don’t think I would have done this. Actually, my husband is the one who introduced me to Paleo, but it took 6+ months for me to do this mostly due to the cooking, which I was completely clueless on.   2. Looks tasty! Beets make such a wonderful accompaniment to a dish like this.
    I also had a salad for lunch today, I grated some kohlrabi, carrot and cucumber, added some sesame seeds, lemon juice and olive oil, and for protein stir-fried tilapia fillet with garam masala. Next time I’m going to add a boiled egg too.

    I made a delicious breakfast for dinner last night. I julienned some sweet potato and added garlic powder. I made “hash browns” with them in ghee and put two over easy fried eggs on top. I love runny yolks on my eggs and missed soaking it up with toast. Now I have found a new “sopping” vehicle! Delicious……thanks for all the recipes Sarah!

    My hubby and I both work from home, and I make us a huge “whatever is left over from dinner last night” salad every day for lunch. You feel so “clean” afterwards, and I love that it forces us to sit down and ENJOY our lunch break together:) Great post!

  11. I love eating BIG salads for lunch. When I was working last year, everyone around me would be eating fried food and drinking Coke, & I think they actually drooled over my salad. They all would say I wish I had time to cut up vegetables. How long does it really take to make a salad…not long at all!

    My favorite combo is:
    – Any type of protein (usually chicken, sometimes london broil, grilled salmon or when I was in Maine on vacation–lobster!)
    -whatever veggies I have: English cucumber, grape tomatoes, broccoli, red onion, scallions, etc. (In the summer, when I grill vegetables by the ton, I will add those too!)
    -Avocado I love adding avocado! It makes it feel so decadent!
    -Nuts or seeds- pumpkin, walnuts, almonds, pecans
    -Sunflower sprouts (I used to get these fresh when I lived in FL, haven’t had them lately 🙁
    -Homemade salad dressing of olive oil, lemon juice and raw garlic
    -Oh and lettuce! I like romaine, dandelion greens, spinach, or the mixed baby greens

    I love salads so much, in the summer I’ll often eat them for lunch and dinner! I’ve recently taken out nightshade vegetables and nuts from my diet temporarily to see if it will help my digestion. I have chronic fatigue syndrome and I think it’s linked to a yeast overgrowth. (Note, that’s why I use lemon juice instead of vinegar) I really miss my grape tomatoes and walnuts. I like that you use purple cabbage. I never though to do that! Do you buy it already shredded? I used to add carrots to my salads too, but I’m afraid about the sugar content of them with my health issues. I can’t wait until this problem is cleared up and I can eat all veggies and fruits. Being paleo is hard enough, but being restrictive is harder.

  12. Sarah, This all looks great and I have tried the meatballs and Shrimp loves coconut last week. I am looking to purchase a pressure cooker. Any suggestions? There are so many sizes and add ons that it is a little overwhelming. I am only cooking primarily for myself and an occasional guest. Thanks so much.

      You should get a 2nd generation (no diddler on top) stainless steel 6 or 8 qt pressure cooker. Non-stick interior is another option. See Lorna Sass’s pressure cooking cookbooks for lot of information on pressure cookers, basics & tasty recipes. I agree about Fagor. I have one and love it!

  17. This recipe was beyond amazing. I grilled up the chicken and also put some red, orange, and yellow bell peppers to roast and cut them up into slices and made some garlic paste and mixed it in as well.

    We live in Maine, started Doing Crossfit 3 months ago LOVE it, and now deciding to try Paleo. We have 2 boys 12 and 9(they can be picky eaters at times). I grew up a farm in Ireland so i love eating home cooking and love my food. i’m a healthy 5′ 8″(143lbs) my husband is 6’1″ and weighs more than he likes(heaviest ever… 265) he wants to get back to a healthy weight.
    I have a slow cooker but do i need a pressure cooker…
    I’m really NOT a great cook but i try, my husband wants to eat healthier and he loves his snacks and “sugar” and ideas would be great.
