The boys and I made this fast meal on Monday night and it was delicious and easy enough that the evening did not feel as much like hectic Monday’s often can….
Oh, and check out Rowan chowing on spaghetti squash – it was like some sort of spaghetti squash nirvana!!
Now for the recipe!
Sun Dried Tomato Chicken Bake
2 lbs boneless skinless chicken breasts cut in half (I used the organic free range chicken breast tenders from Trader Joe’s)
8.5oz jar of julliane cut sun dried tomatoes
8 garlic cloves, sliced thin
2 tablespoons dried basil
Sea salt and black pepper to taste
Preheat oven to 375. Place the chicken breasts in a large glass baking dish. Sprinkle with the dry spices and mix well. Sprinkle the sliced garlic on top and spread the sun dried tomatoes and the olive oil that it’s in the jar over the entire dish. Seal tightly with tin foil and bake for 20 minutes. Remove the tin foil and bake for another 15 minutes or until the chicken is no longer pink in the middle.
I also made Brussels sprouts cooked with diced bacon and a spaghetti squash cooked in the pressure cooker and tossed with some grass fed butter.
Brussels Sprouts with Bacon
12oz of bacon, diced
1/2 lb Brussels Sprouts
1/2 teaspoon dried dill
Back pepper to taste
Dice the raw bacon and cook in large skillet until crispy. While the bacon cooks, wash the sprouts, cut off the ends, and quarter. Once the bacon is crispy, add the sprouts to the bacon and cook for 7-10 minutes or until the sprouts are tender. Season with the dill and pepper and serve.
Enjoy!!

Those brussel sprouts look good enough for me to almost try them…any chance you’ll be sharing that recipe, too?!
Just added the recipe below the chicken one! : )
Thanks! 🙂
Finally got around to cooking both the chicken and sprout recipes the other night. I’m officially a huge fan of brussell sprouts now! Yay! Thank you! My hubby even liked them and that’s saying something! 🙂
Looks very good! And Rowan is so cute enjoying the spaghetti squash 🙂 your kids look so healthy by the way, I used to be worried how to start my kid on a paleo diet (if I ever have kids, that is ;)) but you made me really confident with your posts and podcast and now I’m sure I can do it and that it’s possible. Thank you!!
Thank you Marinka!
How do you make the spaghetti squash in your pressure cooker? Everything looks soo yummy!! I’m going to put this on the menu next week.
Hi Tiffany! I just cut the squash in half, scoop out the seeds, put the whole thing in the pressure cooker, add about 2 cups of water, bring to pressure and cook for 15-20 minutes. Then you just scrape out the insides with a fork! Super easy and so so good! : )
Sarah did you use the sun dried tomatoes that are packed in oil? Love your blog by the way and can’t wait for the book!
ok, read the whole recipe and answered my own question 🙂
Yes, and sorry I didn’t answer earlier and glad you found your answer!! : ) Thanks Adrienne!
Hi Sarah,
Love the blog. When you say cut the chicken in half, do you mean cut into a right and left half, or a top and bottom half (sometimes our chicken breasts can be very thick in one part and not so think in another…I’m thinking about trying to cook evenly). Thanks!
Long-ways half. Does that make sense? So they are more like chicken tenders. They just cook faster that way but you can leave them whole if you like also!
So, I could use chicken tenders instead?
Yes, absolutely!
that looks fantabulous! nuff’said.
LOL!! Love it Kris, thank you!
LOL…OMG Rowan’s face is hysterical!!! 🙂
Yes, he is pretty ridiculous. ; ) LOL!!
THIS LOOKS AMAZING! gonna do this tonight or on the weekend
i can’t find Spaghetti Squash where i live (smaller sized city in Australia) just wondering if it was called anything else? i’ve seen Butternut Squash is that the same thing? might have to hit up a local green grocer instead of the big supermarkets.
butternut squash is not the same thing!! However sometimes spaghetti squash is referred to as calabash and vegetable spaghetti. (at least that is what my father has told me) Good luck, once you find it and cook it you will love it and will want to buy more because it is so easy yummy and perfect alternative to spaghetti! 🙂
I too live in Australia, and spaghetti squash is impossible to find here 🙁
I asked my local greengrocer could he get some in for me and he said he hasn’t seen one for years – obviously not ver popular over here. Dave, he suggested going direct to the markets to look for one. Absolutely love Rowan’s face – he is incredibay cute!
Such a bummer that it’s hard to find spaghetti squash over there! You can always slice zucchini really thin and blanch it quickly in water or saute it in some coconut oil or butter for a great noodle replacement!
Thank you so much for all of your great recipes!! I check the site daily to see what I’m making for dinner 🙂
Thank you Brandy!!! : )
Oooh, I think I’ll give this one a try next week. This recipe sounds incredible.
Thanks Kat!
I listened to the UG Wellness podcast you were on. That podcast and the recipes like this one are helping to make the transition to paleo easier for my family and I. My son thanks you. Have a great day, CW
Thank you so much Chris!
Made this tonight, post workout. It was phenomenal. After the 20 minutes I pulled off the foil and then threw in a bunch of asparagus and broccoli. I tossed the veggies with the oil already in the pan. Turned out amazing.
Hey Josh, Love the idea of adding veggies to the chicken – sounds great!
When it comes to healthy eating, your kids are amazing. Actually, they are too amazing. After seeing the pic of Rowan eating spaghetti squash, I now believe that the kids are actors you hire to make you look good. 🙂
I cook for two grandkids, 3 and 6. Spaghetti squash? Paleo? Low Carb? Forgetaboutit!
Too funny!! That’s awesome, I won’t even mention your comment to my seven year old, he’s so business minded he’ll probably start charging me every time I take his picture! LOL!
Okay, you have officially inspired me to try brussel sprouts. I bought them today at TJ’s and can’t wait to try them. My new best friend is cabbage…I’m in love with cabbage.
Pressure cooker—I don’t have one nor have I ever used one. I see that you use yours A LOT…I may need to invest in one.
Pressure cookers are great! Such a time saver. : ) Highly recommend the Fagor brand. You can check them out here! http://astore.amazon.com/everpale-20?_encoding=UTF8&node=2
Fabulous recipe I love sun dried tomatoes, thanks.
Thank you!!
Amazing recipe! We loved this last night. We added abit more garlic (garlic lovers), but it made little difference. Thanks!!
Just made this tonight. Yummy.
I used pancetta instead of bacon.
Thanks.
Glad you liked it Laura! : )
Thank you so much for your posts. I made this for lunch today and it was so awesome!! I made the chicken and the brussel sprouts. My husband said it was incredible. Thank you so much for all your inspiration. I am going to read more and listen to your podcasts so I can get some ideas on how to get my kids on board. I can’t wait for the cookbook!!!!!!
Thank you Micki!! : )
Used your recipe yesterday with one change – slow cooker instead of oven. Since I’m cooking for 4 adults and 2 kids, I increased the ingredients by about half. I opened with a tossed green salad. No spaghetti squash for these mostly SAD eaters so Dreamfields spaghetti with a homemade sauce as the side. They all loved the chicken and the kids even ate some of the sun dried tomatoes. I figured they would pick them out. Oh, a bottle of Melini Chianti was shared by the adults.
Yummy Bob!! Sounds great!
We loved this dish. I doubled the recipe on the chicken bake, as we eat often.. mini meals all day. It was very flavorful, yet simple to prepare. I enjoy your blog, my step children and I choose dishes from your recipes, together. I am teaching them to eat well. They like seeing your beautiful kids, and it inspires them. Thank you and your family for that.
That was SO good. We just tried it tonight. We used chicken thighs instead but were super tasty. We also made butternut squash instead, can’t find a speghetti squash here either but I think it might be too late in the year.
Thanks for the recipe. It was a hit!!
Yum! I’m generally trying to avoid nightshades right now, but I might have to make an exception for this recipe tonight.
Made this for dinner last night … the combination of super-easy, super-fast, and super-flavorful = win!
Once again, another delicious recipe. Thanks for making paleo living so easy. Love the podcast too!
Thanks Eric!!
We tried the Sun Dried Tomato Chicken Bake and it was yummy. Thanks for another great recipe!
Thanks Natalie, so glad you liked it!
Made this dish tonight and my family LOVED it! Not only was it nice to have a new recipe, but this was the first time in my life I had ever had brussels sprouts! I knew they would be good in bacon! What a great way to get my whole family to eat Paleo without really even noticing it! I am loving the podcast and can’t wait to get the book and try more recipes!
Thank you Miaja, so glad your family all liked the dish!
I made this last week, and I have to agree, it was a cinch to throw together! Kids devoured it. My vegetarian husband is a huge fan of sun-dried tomatoes, so even though it wasn’t meat-free, he had to admit this was a good recipe. Kalamata olives would be a yummy addition to this. The chicken was moist and tender. Thanks!
LOVE the idea of adding Kalamata olives, thank you Elizabeth!
I bought some Kalamata olives today for the sole purpose of adding to this recipe – thanks for the suggestion!
Another winner, Sarah! Like Bob T, I made this in the slow cooker. Added some sliced shallot and chicken stock and it turned out great. I’m planning to try the baked version when time allows. Delish and easy. And thanks for helping me “re-discover” brussels sprouts. The whole family dug the meal. Best, KimA
Awesome KimA, so glad you liked it!!
We made this a couple of days ago…and my hubbster is floundering cause every time I bring a recipie of yours to life in our house, he claims that THAT one is his favorite…so this was the new favorite!!!
My caveman husband made this the other night with the spagetti squash and sprouts, sooooooooooo delicious, we had enough for 3 days, best leftovers ever!!! The brussell sprouts were amazing, my favorite vegetable with bacon!! It doesn’t get any better than that. Thanks again for another awesome recipe!!
Thank YOU so much Melissa, and you are welcome!!
Tried this tonight, and it was delicious! We had roasted carrots and parsnips on the side as we were out of brussel sprouts. Wonderful recipe!
So glad you liked it Sue!!
I made this for dinner last night! YUMTASTIC! Last week was our first real week on the ‘paleo plan’; and this was by far my favorite meal. (Even with the brussels sprouts!) My husband and I loved it! The best part was that I didn’t have to cook anything in coconut oil! Still getting used to that…it kinda makes me gag! 🙂 Thanks for such an informative and easy-to-navigate website!
Thank you so much Donna! Oh, I hope you grow to like coconut oil, I love it and in your own words, it’s YUMTASTIC! LOL!!
Now that’s a little guy thouroughly enjoying his food!!!!
LOL! Yes indeed!!
I’m curious about your food this is all totally new to me! I have heard a pressure cooker removes many nutrients versus regular cooking and baking, is this true? Also wondering why so many recipies use bacon or pork as I understand that it is difficult to digest and even with proper cooking there is a Trichinosis infection risk. Am I completely wrong or what’s the deal???
Pressure cooking does the exact opposite. You use less liquid when cooking with a pressure cooker and a faster cooking time which actually helps to retain nutrients. See this link http://missvickie.com/library/benefits.html Furthermore, the fear of Trichinosis is really no longer an issue, especially if you are buying quality meat or pasture raised/humanely raised pork. Even with conventionally farmed pork Trichinosis is not an issue today. Even if Trichinosis was present, if you cook the meat above 170 you are not at risk. There was something like 19 documented cases back in 1998 of Trichinosis and it was from people in Asia eating raw pork. I’m not worried. : )
I made this tonight and it was sooo delicious!! My husband needs to have a ton of flavor in order to really like something and this was a hit with him! I did modify it a little and added Roasted red peppers, spinach and fresh basil, cooked it the same and it came out perfect!!! Love all your recipes!!
Oh I love your additions to the recipe Kristan, sounds amazing!! Thank you!!
Ooo, red peppers and spinach sounds like a wonderful addition! Does anyone have an opinion on how it would work with the addition of sliced mushrooms? I have a bag of baby ‘bellas I need to use up before they turn.
Oh my, I think I am a little obsessed with this recipe now! I made it for the first time last night for my boyfriend (he’s the cook, not me), and it was SO amazing… he actually ate it all, so I don’t even get the joy of trying it as leftovers. LOL
I think this will be my new Go-To meal, yum!!
Thank you Sarah for all your great recipes. I just went Paleo a little over a week ago and feel fantastic!!! I made this last night and added mushrooms, it was delish!! I served it with pureed cauliflower and zucchini. My two year old couldn’t get enough of it. I can’t wait for your cookbook to come in the email. You make everything easy for a busy working mom of two babes. Thanks again Sarah!
Thanks for all the wonderful recipes! I have a 1-1/2 year old, and I’ve just started on the paleo path myself. My family is forced to join in, since I do all the shopping. =) I’m having such a hard time getting my son to eat meat. Any ideas for easy finger foods for toddlers, anyone? I’ll keep working on him…meanwhile, this chicken was fantastic! Made it for lunch today!
This was out of this world – so easy and delicious. I had a family of four over for dinner and everyone loved it equally. Thank you!
saw this recipe last week and i’ve been craving sun dried tomatoes ever since!! made this tonight with a couple of additions: substituted fresh basil and crushed garlic (because that’s all i had) and added pearl onions, canned artichokes, zuchinni, and a couple pinches of parmesan cheese on top! it was amaaaaaaaaaaaaazing!!
i’ve been mostly primal now for about a year now and can’t believe i only found your website two weeks ago. i’m 27, working full time, and trying desperately to get my live-in boyfriend on board. while he’ll eat almost any primal or paleo dish i cook up (and even cook up any recipe i put in front of him on his nights to cook), he has no desire to cut out all the foods i avoid. but every recipe of yours like this one — incredibly delicious, embarrassingly easy to prepare, tough to screw up addition-wise, super filling, and plainly healthy — helps me keep him healthier with so little effort, and both of us happier. so thanks! and i’m looking forward to many more fantastic meals 🙂
So glad you found my blog and that you are enjoying the recipes Samantha! It’s great to be able to at least sneak in healthy meals for your boyfriend, and I bet he’ll come around eventually, just keep doing what you’re doing with a smile and he’ll catch on!! : )
Tried the brussel sprouts the other night with some peppered turkey bacon. Really good considering my husband and I have been afraid of these since we were kids. You gave me courage and so glad you did.
Trying the chicken tonight and adding the following in addition to the tomatoes and garlic: artichoke hearts, mushrooms and kalamata olives. Adding feta on half for my husband.
Recently did strict paleo for lent and fell in love with it. I didn’t eat a lot of meat before so, it was a little hard at first. I haven’t eaten chicken in about 10 years so, I’ll let you know how this recipe goes. If you don’t hear back, you know what happened :-).
That is what my son looks like when eating spaghetti squash as well. What a fun veggie for kids!
Everything about this recipe looks AMAZING, can’t wait to try it out!.. a couple of quick questions though, how did you prepare the spaghetti squash? was that butter you added to it?Also are all these wonderful recipes included in your cookbook? Thanks 🙂
Made this tonight.. awesome 🙂 Has the big thumbs up from me .. thank you 🙂
I made this meal last night–minus the squash because I didn’t have any–and it rocked! The chicken was so simple to make and I didn’t have to go to the store to get any of the ingredients. I cook for two, but I made extra so I would have some extra chicken to top salads with.
I love this recipe! I use boneless pork chops instead. And don’t get me started on the brussel sprouts…yum!
Making this tonight. Just stuck it in the oven. CANNOT.WAIT. Going to serve mine with Broccoli and Brown Rice.
Awesome meal! The brussel sprouts w/bacon and the chicken are a perfect combo. Made a bunch to keep for leftover lunch for the week. Thanks!
Just made this tonight. We topped it with a little fresh goat cheese. Amazing! Thank you, Sarah! Next time I may add a few toasted pine nuts on top as well.
Made this last night! So easy & Yummo
Oh my god, I am at work and cannot stop myself from reading your site! Oops, hope I don’t get in to trouble! 😉
This is such a great receipe to make, easy and it looks delicious!
Can I have more details about how you do your spaghetti squash in the pressure cooker? And your website rocks…..can’t get enough of your tasty recipies! Thanks again.
Wonder how this would work in a slow cooker? I don’t do chicken very well in the oven.
this was good and very easy!!
The Sun Dried Tomato Chicken Bake couldn’t have been easier to make, and it was delicious! Thanks for all these great recipes that make the transition to paleo easier for us newbies. I think all my dinners and half my breakfasts for the next week are recipes from your site!
Made this the other day and it was fabulous!! Yum! Will be making this again soon!
So glad you liked it Leigh!
I made this last night. It was so good! I added mushrooms to the chicken and roasted up some fennel too. Definitely a keeper. Thank you!
Made this for dinner and everyone loved it, including my 6 and 11 year olds who don’t like tomatoes. This was easy and delicious and will become part of our regular rotation for sure!
So glad you all enjoyed the meal!
This recipe is amazing… and gorgeous! It made it on the cover of my eBook! Thanks Sarah. http://www.easypaleo.com/ebook
Wow, this looks amazing! Making this for dinner tonight. And Rowan is so cute, digging into that squash!
Made the chicken and bsprouts tonight with sweet potatoes. Absolutely the tastiest paleo dinner I’ve made! The chicken is so yummy! Added some onions and mushrooms….AMAZING!
I made the chicken last night, and it was so good! I’m normally starving after work and then working out, so I love a good, but hearty quick recipe. The fact I could shower while this was in the oven was also a time saver! My sister got me hooked on paleo, and when I’m home she’ll cook different recipes. However, I LOVE tomatoes and she hates them, so I thought this was a good one to try on my own! And it’s great for left overs at work and to even put in a salad 🙂
Sarah this was easy & awesome! My husband is not a big fan of chicken & he loved it! Thanks for all of your help with my meal planning. Makes it much easier to raise a family paleo with a little help! All the best!
Thank you for the recipe! Combined yours and another one that I found online so I poured a little olive oil, balsamic vinegar, and dijon mustard over the chicken before baking. The sundried tomatoes weren’t in olive oil so it was just enough oil. So good and SO easy! Also threw some sliced zucchini in there too since I was too lazy to cook it up any other way.
I am sure you can but was thinking boneless skinless chicken thighs? Longer cooking time? Comments?
Loving your site and your new book that I just got! Making my first week a Paleo a breeze and lost 6.6lbs!
THANK YOU!
I fixed this for dinner earlier this week and absolutely LOVED it! It was so easy to make! I used thin sliced chicken breasts and added some sliced kalamata olives. I severed it with a side of asparagus and it made the perfect meal. Thanks for a winning recipe!
I made this and added it to my favorites! Leftover bits go GREAT over salad. I’m basically cooking my way through your blog. After loving 5 recipes in a row I asked for your cookbook for my birthday and it’s on its way! I plan on basically cooking my way through it. I’ve been sending your recipes to friends as well to get them to try paleo! One friend just got put on it for health reasons and I told her that this blog will make everything okay and eating will be delicious. Thank you for much for this and keep posting/publishing recipes!!! Fantastic 🙂
Thank you so much Kim!!! So glad you are enjoying the recipes. : )
Made this tonight! Sooo good! I actually cooked it with a thingie of mushrooms, and I added about a 1/4 cup of goat cheese while baking. It took longer to bake. When it was done, I pureed everything but the chicken and served the sauce over the pasta and chicken. It was heaven. Thanks for all the inspiration!
YUM, sounds good with the goat cheese!!!
YUM! Sounds so good with the goat cheese!
Sarah love your recipes and your cookbooks ,,, I have been cooking out of them for weeks . Ordered EPIC online before release . Tonight hubby says as I was going through the books as I always do planning meals ” you have been cooking some really good stuff lately ” ,,,, BOOM Y’ALL !!!! That’s all I got to say !
Thank you so much Tamarah!!
I made the sun-dried tomato chicken bake tonight. It was great, and my wife said it’s a keeper. Thank you!
Delicious! I made both recipes with cauliflower mash and my family loved it. My husband even raved about it for two days straight, which he’s never done before.
This has become a staple at our house. I love that it’s so delicious and flavorful but doesn’t require a ton of ingredients. I usually have all of the ingredients in my kitchen already so it’s a great last minute dinner idea. Thanks!
I made this last night and it was great! I had my parent’s coming for dinner and arriving at the time I got home from work so being able to get this in the over in 5 mins flat was great. I used boneless thighs as I find them more moist and tender. The chicken was cooked perfectly, moist and delicious, and the roast sundried tomatoes were yum! I served it with sweet potato mash and a green salad, perfect and so easy, just the way I like my dinners!
Can I use “oven-dried” tomatoes in oil vs. “sun-dried”. Please say yes.
YES!!Absolutely!
Looks Yum! Followed on Twitter.
Thanks Daniella!
