Sun Dried Tomato Chicken Bake

The boys and I made this fast meal on  Monday night and it was delicious and easy enough that the evening did not feel as much like hectic Monday’s often can….

Oh, and check out Rowan chowing on spaghetti squash – it was like some sort of spaghetti squash nirvana!!

Now for the recipe!

Sun Dried Tomato Chicken Bake

2 lbs boneless skinless chicken breasts cut in half (I used the organic free range chicken breast tenders from Trader Joe’s)

8.5oz jar of julliane cut sun dried tomatoes

8 garlic cloves, sliced thin

2 tablespoons dried basil

Sea salt and black pepper to taste

Preheat oven to 375. Place the chicken breasts in a large glass baking dish.  Sprinkle with the dry spices and mix well.  Sprinkle the sliced garlic on top and spread the sun dried tomatoes and the olive oil that it’s in the jar over the entire dish.  Seal tightly with tin foil and bake for 20 minutes. Remove the tin foil and bake for another 15 minutes or until the chicken is no longer pink in the middle.

I also made Brussels sprouts cooked with diced bacon and a spaghetti squash cooked in the pressure cooker and tossed with some grass fed butter.

Brussels Sprouts with Bacon

12oz of bacon, diced

1/2 lb Brussels Sprouts

1/2 teaspoon dried dill

Back pepper to taste

Dice the raw bacon and cook in large skillet until crispy.  While the bacon cooks, wash the sprouts, cut off the ends, and quarter.  Once the bacon is crispy, add the sprouts to the bacon and cook for 7-10 minutes or until the sprouts are tender.  Season with the dill and pepper and serve.

      Hi Tiffany! I just cut the squash in half, scoop out the seeds, put the whole thing in the pressure cooker, add about 2 cups of water, bring to pressure and cook for 15-20 minutes. Then you just scrape out the insides with a fork! Super easy and so so good! : )

    Love the blog. When you say cut the chicken in half, do you mean cut into a right and left half, or a top and bottom half (sometimes our chicken breasts can be very thick in one part and not so think in another…I’m thinking about trying to cook evenly). Thanks!

      Long-ways half. Does that make sense? So they are more like chicken tenders. They just cook faster that way but you can leave them whole if you like also!

    i can’t find Spaghetti Squash where i live (smaller sized city in Australia) just wondering if it was called anything else? i’ve seen Butternut Squash is that the same thing? might have to hit up a local green grocer instead of the big supermarkets.

      butternut squash is not the same thing!! However sometimes spaghetti squash is referred to as calabash and vegetable spaghetti. (at least that is what my father has told me) Good luck, once you find it and cook it you will love it and will want to buy more because it is so easy yummy and perfect alternative to spaghetti! 🙂

      I asked my local greengrocer could he get some in for me and he said he hasn’t seen one for years – obviously not ver popular over here. Dave, he suggested going direct to the markets to look for one. Absolutely love Rowan’s face – he is incredibay cute!

        Such a bummer that it’s hard to find spaghetti squash over there! You can always slice zucchini really thin and blanch it quickly in water or saute it in some coconut oil or butter for a great noodle replacement!

    Used your recipe yesterday with one change – slow cooker instead of oven. Since I’m cooking for 4 adults and 2 kids, I increased the ingredients by about half. I opened with a tossed green salad. No spaghetti squash for these mostly SAD eaters so Dreamfields spaghetti with a homemade sauce as the side. They all loved the chicken and the kids even ate some of the sun dried tomatoes. I figured they would pick them out. Oh, a bottle of Melini Chianti was shared by the adults.

    I made this last week, and I have to agree, it was a cinch to throw together! Kids devoured it. My vegetarian husband is a huge fan of sun-dried tomatoes, so even though it wasn’t meat-free, he had to admit this was a good recipe. Kalamata olives would be a yummy addition to this.     I’m curious about your food this is all totally new to me! I have heard a pressure cooker removes many nutrients versus regular cooking and baking, is this true? Also wondering why so many recipies use bacon or pork as I understand that it is difficult to digest and even with proper cooking there is a Trichinosis infection risk. Am I completely wrong or what’s the deal???

      Pressure cooking does the exact opposite. You use less liquid when cooking with a pressure cooker and a faster cooking time which actually helps to retain nutrients. See this link http://missvickie.com/library/benefits.html Furthermore, the fear of Trichinosis is really no longer an issue, especially if you are buying quality meat or pasture raised/humanely raised pork. Even with conventionally farmed pork Trichinosis is not an issue today. Even if Trichinosis was present, if you cook the meat above 170 you are not at risk. There was something like 19 documented cases back in 1998 of Trichinosis and it was from people in Asia eating raw pork. I’m not worried. : )

    saw this recipe last week and i’ve been craving sun dried tomatoes ever since!! made this tonight with a couple of additions: substituted fresh basil and crushed garlic (because that’s all i had) and added pearl onions, canned artichokes, zuchinni, and a couple pinches of parmesan cheese on top! it was amaaaaaaaaaaaaazing!!

    Tried the brussel sprouts the other night with some peppered turkey bacon. Really good considering my husband and I have been afraid of these since we were kids. You gave me courage and so glad you did.

    Trying the chicken tonight and adding the following in addition to the tomatoes and garlic: artichoke hearts, mushrooms and kalamata olives. Adding feta on half for my husband.

    Recently did strict paleo for lent and fell in love with it. I didn’t eat a lot of meat before so, it was a little hard at first. I haven’t eaten chicken in about 10 years so, I’ll let you know how this recipe goes. If you don’t hear back, you know what happened :-).

  63. I made the chicken last night, and it was so good! I’m normally starving after work and then working out, so I love a good, but hearty quick recipe. The fact I could shower while this was in the oven was also a time saver! My sister got me hooked on paleo, and when I’m home she’ll cook different recipes.     Thank you for the recipe! Combined yours and another one that I found online so I poured a little olive oil, balsamic vinegar, and dijon mustard over the chicken before baking. The sundried tomatoes weren’t in olive oil so it was just enough oil. So good and SO easy! Also threw some sliced zucchini in there too since I was too lazy to cook it up any other way.

    Made this tonight! Sooo good! I actually cooked it with a thingie of mushrooms, and I added about a 1/4 cup of goat cheese while baking. It took longer to bake. When it was done, I pureed everything but the chicken and served the sauce over the pasta and chicken. It was heaven. Thanks for all the inspiration!

  74. I made this last night and it was great! I had my parent’s coming for dinner and arriving at the time I got home from work so being able to get this in the over in 5 mins flat was great. I used boneless thighs as I find them more moist and tender. The chicken was cooked perfectly, moist and delicious, and the roast sundried tomatoes were yum! I served it with sweet potato mash and a green salad, perfect and so easy, just the way I like my dinners!
