Warm up with some soup!

This weekend we had a terrific rain storm which kept us huddled around the fire and craving soup.  This soup is easy, delicious, comforting, and tastes even better the next day.  Here’s how you do it:

Cover the bottom of a big pot with olive oil and add 1 diced red onion.  When onions start to become transparent add 1 lb of grass fed beef and 1 lb of ground pork sausage.  Brown meat and season with a little sea salt, and a generous amount of garlic powder, dried basil, dried oregano, and three dashes of cayenne pepper.  Throw in 4 sliced carrots, 8 sliced stalks of celery, two big handfuls of green beans, 4 cups of organic free range chicken broth, and 1 can of organic diced tomatoes.  Let the soup simmer for about 45 minutes or until veggies are tender.

Chicken salad was diced chicken breast, green onions, celery, grapes, pecans, mayo, grapeseed oil, red wine vinegar, and cracked pepper.  Served with carrot “chips” and steamed brussel sprouts.

  1. Thank you for all the meals that you post here, I really get a lot of good ideas. I have one question, when you use mayo in your chicken salad, is it Hellman’s or do you make your own? Thanks!

    1. I typically use the mayo from Trader Joes. It’s just canola oil, eggs, and vinegar. I love Best Foods or Hellman’s but it’s made with soybean oil which I try to stay away from….I want to try to make my own mayo, just haven’t made it a priority yet.

  2. I made this soup for my family last night for dinner and everyone loved it! Plenty of leftovers for lunch today. The flavors were wonderful and the vegetables were a perfect combination.

    Made this stew tonight and it was the bombdigatty. My only question is what kind of chicken broth did you use? The only one i could find at whole foods had traces of corn starch in it. thanks for the recipe

      Hey Aaron! I use the free range organic chicken broth from Trader Joe’s. It does not have corn starch in it, and all the ingredients are pretty legit. Do you have a TJ’s where you live??

  4. Pork sausage?The regular grocery store kind or do you have a source for high grade pork sausage?

      Hi Jane,
      I do have a local source for good pork sausage – a friend of mine who is a trainer at Norcal – her family have a small pig farm in which the animals are raised humanely, and all organic…. BUT – you can find some decent pork sausage other places as well. We also have a local butcher shop where they grind their own sausage with no additives or anything freaky. Also, a quick internet search on humanely raised or pastured pork brought up tons of information on where you can order natural pork products by region. I hope that helps!

        He loved it! and so did i, we pretty much finished it all in 2 days lol. i didnt make quite as much as the recepie says though! But it was lovely and i will be making it again. weve just discovered paleo and ur recepies are really helpful! thanks
