Wow, I wish it was warm here. It has been unseasonably cool which I guess I shouldn’t complain because soon it will be over 100 but I am ready for some sunshine and warm weather!!

I just have a quick query (I’ve been Google-ing this but can’t get a definite answer) – How many eggs a day/week is it safe to eat?! I’m just concerned as many of your recipes contain eggs. I love eggs and have no problem eating them but I just don’t want to overdose on them either!

Hi MIchelle, I personally do not worry about how many eggs per week I eat, I try to eat a varied diet and I don’t rely on one source for my protein. Eggs, especially if from pastured chickens, in my opinion are a perfect addition to a paleo diet, however, some people with autoimmune issues do not feel very well eating eggs, or some people have egg allergies, therefore you have to decide what works best for you in your situation. If you are feeling great eating eggs and meeting your goals, whatever those might be, you are probably good to go. The longer I have eaten this way the more aware I have become of where my food is coming from so for me personally, my only concern today about eating eggs is if they have come from chickens that have not been fed grains or soy so like I said, I try to buy eggs only from pastured hens, but sometimes I can’t so I go for the omega 3 enriched eggs that can be found at Costco, Trader Joe’s and at most health food stores. I hope that helps!!

I’m eating eggs most days now and still feel fantastic so I’m not willing to cut down when I’m feeling this good, it’s all about listening to your own body. I don’t know if you’ve ever tried adding a little coconut milk to eggs before scrambling them…….. I tried it this morning and it was divine! Makes the eggs lighter and really fluffy, yum!
I’ve been trying out so many of your recipes lately, they’re fantastic and so tasty! I tend to fall off the wagon once a month or so and eat ‘non-Paleo’ foods but I pay for it big time when I do. I end up feeling so rubbish, it’s just not worth it!
