My Favorite Fall Recipe and Join the Hangry B*tches Test Group

 

Fall is in the air, I guess… it is October after all but holy guacamole, living in CA right now, or anywhere in the world for that matter, it feels a little bit not-so-celebratory as the season starts to change. I’ll be honest, my heart feels heavy – the wild fires, the floods, the Las Vegas shooting, and the state of the world at large has me contemplating why life feels so out of whack. I would feel lame and inauthentic if I cheerfully sent out an email with “My Favorite Fall Recipe” without acknowledging all that’s happening. However – as I personally work through all of this stuff, I would like to offer a bit of perspective that’s helping me handle it all – and it starts with gratitude. Ultimately, it starts with us.

 

You, me, our families; we have a lot of power to create change – just by being kinder, gentler, a bit more empathetic, a tad more present when someone wants us to listen, just a smidge more patient with the little things that could otherwise make us stressed. Small change creates big change, like a small pebble tossed in the pool that creates widespread ripples. Sometimes that’s all we have is just that, a tiny little pebble, but we might as well toss it in, because those ripples make a huge difference when spread among all of us. We simply need to show up, and show up with grace and love as often as we are able.

 

For example, I was in Starbucks the other day while Rowan was at gymnastics practice and I guess I looked a bit crazed because a woman came up to me, gently touched my shoulder and said to me, “You look rather pensive!” But I could tell from the tone of her voice she wanted to say, “You look rather pissed!” HA! Well, she caught my attention because her soft kind eyes were the same color as mine, but I could see her story in them just with one glance. Tired, lonely, sad, happy, grateful, scared, compassionate – it all was in her gentle gaze and immediately I wanted to cry. I took her hand, complimented her beautiful eyes, and thanked her for the reminder to soften a bit. So I dropped my “pensive” look and finished my work with a gentle smile.

 

When I got up to leave, I stopped by the women’s table and asked her for a hug goodbye and thanked her for speaking to me earlier. We both had tears in our eyes after our embrace. Two strangers, just connected by love because of love, because of the need for human connection, because she took a minute to see me, really see me, and I took a minute to see her. No other reason. No need for a reason, connection is simply what we all need as humans. We need to be seen, we need to be heard, and we need to feel loved – that’s it. So simple – if we all just took a few minutes each day to really see and really hear each other, I do believe the world would be a better place.

 

So that’s how I’m getting through all the stuff that feels incredibly overwhelming. I’m grateful. Grateful for you, for my family, for the roof over my head, for my ability to hug, to love, to hurt, to cry, to have sorrow and joy. I’m grateful to be right here, to feel it all, experience it all, and own it all. I’m grateful to believe that what is happening right now is just a moment in time, we are all in each moment together, and we can choose how to experience life – either with gratitude or with a cold heart, and I want so choose gratitude, even when it’s hard to do, it’s what I want so I’m working towards that as best I can.

 

With that being said – I’m sharing with you today my favorite fall recipe because food is good, it’s meant to be shared, and maybe this could be a meal that brings you together with another person who needs to be seen and heard – because there’s nothing like food to bring us all together.

Butternut Squash Chili

Ingredients

  • 2 lbs ground bison or other ground meat of your choice
  • 2 tablespoons butter coconut oil, lard, or ghee (I used butter)
  • 1 yellow onion diced
  • 3 garlic cloves minced
  • 1 small butternut squash peeled and cut into small cubes (about 6 cups of cubed squash – use more or less if you like)
  • 4 celery stalks diced
  • 2 tablespoons cumin
  • 2-3 tablespoons chili powder
  • 2-3 tablespoons Italian seasoning
  • 2-3 teaspoons dried red chili flakes
  • 1 bay leaf
  • 2 cups chicken broth
  • 18 ounces of diced or crushed tomatoes about 2 cups – (I purchase my diced and crushed tomatoes from Tropical Traditions)
  • Sea salt to taste

Instructions

  1. In a large soup pot, melt the butter or other fat of your choice over medium heat.
  2. Add the onions and sauté until translucent.
  3. Add your ground meat and cook just until browned.
  4. Add the minced garlic, cubed butternut squash, and celery and mix well.
  5. Add all the spices except for the bay leaf and mix well.
  6. Add the chicken broth and tomatoes and stir, bring to a simmer and add the bay leaf.
  7. Turn down to low and let simmer for 25-30 minutes or until the squash is fork tender.
  8. Taste and adjust the seasoning as needed.
