Chicken again, coleslaw a million ways, and after school snacks

I love finding easy already prepared sauces that are paleo perfect!  I purchased some Curry Simmer Sauce from Trader Joe’s and the ingredients are spot on!!  The directions call for adding 1 cup of water per jar.  I used two jars and instead of water I added an entire can of coconut milk, some cilantro, and some garlic powder.  I mixed it all right in the crock pot, added some chicken thighs, and a sliced and peeled butternut squash.  This took me about 10 minutes to prepare.  Cooked all day on low and was down right tasty!

On to the coleslaw.  I eat a lot of coleslaw about a million different ways.  Pictured is green cabbage, diced turkey deli meat, a few scoops of sun dried tomatoes, a diced apple, and a handful of sliced almonds.  The dressing was a small spoonful of mayo, walnut oil, and a splash of balsamic vinegar.

Also pictured is a typical after school snack for my boys (ham slices, cherry tomatoes, carrot sticks, pecans, pickles & artichoke hearts).  The dip is mayonaise and curry powder.  They followed that up with a few strawberries.

It is truly unbelievable how much food my family consumes….

Thank you so much for this site! I love coming here and it is super helpful 🙂
I just made the coleslaw today and it was delicious. Thanks for keeping us updated with great paleo recipes

  2. Too funny! I just bought the same Trader Joe’s sauce. I thought the same thing about adding Coconut Milk next time. We cooked it with chicken and put it over Cauliflower rice!!!! Yum.

I feel the same away about our families food consumption. After going grain free, dairy free all I do is cook. But it OK. We are all seeing results and feeling. better.

We are going out of town tomorrow and I have spent a lot of time preparing for the trip as to keep us on track.

    Great blog. Take care.

Awesome site, and great recipes! I have been CrossFitting for a few months now, and I love the results, but I realize that I need to get my diet in check. After researching different plans, I have decided to try the Paleo diet. The timing for finding this site couldn’t have been better, as I purchased a crock pot last week, and planed on starting the Paleo diet on Monday 12/7. Your site has given me the added motivation to take the plunge into a healthier lifestyle. Thank you!

Where do you find lunch meat that’s not so processed and that is acceptable?

    1. Even if you locate deli meat free of all the “bad junk” there is usually still a significant amount of sodium. That said, it is quicker than always having fresh chicken on hand. Hormel Natural Choice is free of nitrates/nitrites and the other usual chemicals. Trader Joe’s and most quality supermarkets will offer a brand that has minimal “junk”
