I have every intention of doing another “Week in The Life” post, and plan to start tracking our food as of today but in the meantime, here is another complete meal post that I hope will be fun and helpful. Dinner last night was a family project and a nice way to return home after our most recent Paleo Talk seminar in Clackamas Oregon. I’ll be posting tomorrow about that event. In the meantime, here’s dinner!
Easy Grilled Steaks
As many steaks as you will need to feed your family, bring to room temperature, sprinkle each side with sea salt and freshly cracked black pepper and grill over medium high heat. We like our steak rare to medium rare so for thinner cuts of meat it only takes about 5 min. per side on the grill. Let your meat rest for at least 10-15 minutes before you slice into it so that you do not lose all those precious juices!!
Veggie Stir Fry
1 yellow onion, sliced
1 red bell pepper, sliced
4 zucchini squash, diced
1 cup fresh basil, diced
1/4 cup jullian cut sun dried tomatoes packed in olive oil
2 tablespoons coconut oil
Sea salt and pepper to taste
A splash or two of balsamic vinegar
Heat the coconut oil in a large skillet over medium heat. Add the onions and peppers and saute until the onions just start to carmelize. Add the remaining ingredients and saute together for about 4-5 minutes or just until the zucchini become tender but not mush.
Grilled Artichokes
3-4 large artichokes (or as few or as many as you need to feed your family)
I first cooked the artichokes in the pressure cooker. Cut off most of the stem, leaving about 1-2 inches. Place in the pressure cooker with 2 cups of water, lock the lid, bring to pressure and cook for 10-12 minutes. You can also boil artichokes by placing them in a large soup pot, add enough water to cover the artichokes, bring to a boil and let them boil for 30-45 minutes, depending on the size of your artichokes. You will know they are done when a leaf easily pulls away from the artichoke. Once the artichokes are tender, cut them in half, scoop out the feathery insides but make sure to leave the heart of the artichoke intact, lightly brush the cut side of the artichoke with melted butter or olive oil, and grill cut side down for about 5 minutes or until they are nicely browned. Serve with the following recipe of Garlic Lemon Butter
Garlic Lemon Butter
6 tablespoon grass fed butter
1 tablespoon crushed garlic
Juice from 1/2 a lemon
Sea salt (optional) and black pepper to taste
Melt the butter in a small sauce pan, whisk in the crushed garlic, lemon juice, salt and pepper. Bring to a simmer for 1-2 minutes. Use as a dip for the artichokes and the steak. You can sub olive oil for the butter if you wish.
We also made sweet potatoes for the kids in the pressure cooker. Peal and cut into even sized pieces (about 2 inches thick). Place in the pressure cooker with 1 cup of water. Bring up to pressure and cook for 7 minutes.
This meal served 5 with only some of the veggie stir fry and sweet potatoes left over.

I am very allergic to eggs both the yolk and the white part. So I am really struggling with the breakfast section. I have made extra dinner, so I could pack it for my lunch. I don’t think I could eat the same things for breakfast as well. I have been eating bacon and chicken sausage but am wondering if you might have any more ideas for breakfast?
I do often eat left overs for breakfast, or I also love cooking up some sausage and making a veggie hash to go along with it with grated zucchini, sweet potato, onions, spinach, etc. You can mix up your leftovers by putting the meat over a salad at lunch and for breakfast stir frying with greens like kale, collards, or spinach! You just have to get creative and go for it!

In fact, I have to scratch your Apple Almond muffins off the list because I’ve realized I can’t handle the eggs. 🙁 They were very good though. Thanks for the other breakfast ideas! I’m allergic to eggs as well as chicken and turkey. It is very hard to come up with different stuff. My latest thing is to go to our local produce store ( inside cuz we live in Florida) and get one each of all the veggies. In the morning then I will saute one of the veggies in some bacon fat with some leftover beef or salmon. I’m sure hoping I get better soon!!! I’m feeling your pain, Cynthia and Melissa. I’m so thankful for your recipes, Sarah, that are helping me survive!

I have been eating Paleo for 3 weeks. I am feeling great & feeling so good about what I am feeding my kids, as I have brought the whole family on board with the help of your awesome book. The only problem is my husband. He has a very high metabolism & eats horribly & has always been very skinny. Now he is losing even more weight & people are asking if he is sick & he keeps telling me he can’t keep eating like this. He is about 160 with zero body fat – he has a very labor-intensive job & is very muscular (i call it skinny strength) Is there a way for men to actually bulk up eating this way?
YES! He needs to eat way more fat and way more protein. He can’t overdo it with coconut oil, coconut milk, avocado, tons of sweet potatoes, lots of almond and cashew butter, real grass fed butter, lots of protein, etc. Also, I would suggest that he start to strength train – not as in do a bunch of cardio, but back squatting, dead lifting, bench pressing, etc. I also suggest he go to http://www.robbwolf.com and type in mass gain or putting on weight and go to town on his podcasts/blog posts about the subject.
This looks fabulous! One question…How much olive oil should be substituted (for the butter) in the Garlic Lemon Butter?

Hey Sarah! Do you use a steamer basket and trivet with your pressure cooker when cooking sweet potatoes or artichokes?
I do not, I just throw it on the bottom of the cooker with about a cup or 2 of water!

Hi Sarah – I’m on my second week of Paleo and just LOVE your recipes. I am gluten intolerant and love all the foods that you use like sweet potatoe, plantains, kale, acorn squash, and now coconut oil. I am Puerto Rican and loved the Puerto Rican beef and would love other Puerto Rican Paleo recipes. I mader the chicken and bacon potabella mushroom sandwiches tonight – delicious the mushroom with the coconut oil flavor was out of this world. If you are ever at the Safeway on Mangrove come say hi to me I manage the Starbucks inside the store. By the way I steamed Coconut Milk the other day for my tea misto! Jeanette

So far, this Paleo hasn’t been that hard
I am on day 7 and I am actually able to go to the Pub and shoot pool and drink water instead getting tanked like I was before lol…and saving tons of money
I gained most of my wait eating hangover food the next day(pizza etc) and that was like every other day…so I am really enjoying this so far
I really like the personal touch you put in your book…very cool

wow, this one looks awesome as I am about to go grill some steaks in a few minutes.
On the breakfast food and no eggs, I am not allergic but cut way back…I did three weeks on none and am now trying to reintroduce. In the last few I only had 4 eggs total. This morning, I sauteed some chopped onions, garlic and some chopped TJs smoked wild salmon (the one without sugars), then I added some greens, sea salt and pepper. It was delish!
My morning is generally something like that when I am not having leftovers…sauteed onions/greens with a protein.
Oh and thanks, I ended up trying grilled Belgian endive after reading about the artichokes. They were great!

Looks really great as do all the recipes in your book, which I just received yesterday. There are so many meals I’ll be able to make for my husband but will not partake of myself because of all the nightshade veggies and eggs. Can someone say “leaky gut?” I would so love to see your next cookbook feature more recipes for those of us with problem tummies. I’m sure there’s a stack of them floating around in your brain just waiting to be put into print.

I suggest getting one if you can, it makes life so much easier!! As far as the a sub for the pressure cooker, it depends on what you are making. For example, the artichoke int this recipe you would simply boil them rather then pressure cook them for about 40 minutes but it depends on the size of your artichokes as well.
