I had some left over Spice Rub Slow Cooked Chicken so I made myself a sandwich out of the leftovers for lunch today. No, I’m not kidding, and no I haven’t fallen straight off the paleo wagon back to my old Subway days, but yes – I made a big ol’ sandwich and shared it with my almost 3 year old (he’s getting so darn big!!) who kept slapping his leg and falling backwards saying, “Mom, this is soooooo good!!”
Oh, and one should note that the left over spice rub chicken that I used also has onions involved that caramelize while they cook at the bottom of the slow cooker so adding these to the sandwich made it extra delicious.
Chicken Paleo “Sandwich”
2 giant portobello mushrooms, stems and gills (underside of the cap) removed
1 cup cooked chicken, shredded
1/4 cup grilled onions
3 slices bacon
1 cup fresh arugula
2 tbsp Paleo Mayo
2 tbsp olive oil
In a large skillet heat the olive oil and add the mushrooms, starting with the caps up. Cook on each side for about 5 minutes, until the mushroom softens and starts to turn golden on top. Remove the mushrooms from the pan and slather each side with the paleo mayo, pile on the chicken, onions, bacon and arugula, put the two mushrooms together like a sandwich and dig in. Of course the possibilities are endless with this sandwich idea – my next one will probably be turkey, avocado, and cucumber!! Get creative and as usual:

Mmmm, that filling looks goooooooood…. I really shouldn’t look at my feed reader when I’m fasting!
I did the mushroom-as-bread thing for a while – it was great when I was eating lots of cheese, and would grill the mushies and fill them up with tomato and cheesy goodness… But once you get one funky mushie, the romance is over! I’ve managed to start enjoying button mushrooms again, but can’t face the biggies!
These days I don’t bother with ‘bread’, I just eat my sandwich fixings as a salad. Much easier to prepare and add extra fats. Lucky I don’t often need holdable foods. When I do, I make the fillings into mini frittata! 🙂
This looks awesome, Sarah! Maybe I’ll try mushrooms again and see if I can tolerate them. The last time I tried them, they didn’t go so well in my belly… but it may have been the fact that they were morels- I hear they’re especially brutal on the system. I used to eat portobello mushrooms in place of beef burgers back when I first was trying to lose weight… little did I know that I’d have done WAY better if I had tossed the bun and used the mushrooms AND the beef ;o) Can’t wait to try this!

I just picked up some portabella mushrooms today. I’ll have to try that! Sounds amazing though. I had an appt with John today and I kind of expected him to have a baffet layed out in the office today. He did say the food you’re making tastes amazing. Oh Sarah, I’ve never thought of using mushrooms as buns. That looks delicious! Adding a little avocado, like you suggested, would make it a hit at my house!

Thoughts on how long the paleo mayo will keep in the fridge are appreciated (3 days?). You don’t see much info about how long it is “safe” to eat raw eggs. Thanks.

When I make it I usually eat it within a couple of days because I’ll use it for a big chicken salad and any left overs go pretty fast. I would think it would keep longer then three days however. The vinegar works as a preservative, but if you are feeling sketchy about it I would say that the 3 days sounds reasonable.

Hi again Sarah. Thank so much for visiting my blog. I found some yummy paleo recipes for bread made from nut flour, and they work great for sandwiches! The almond bread is really tasty, and although the walnut bread doesn’t have as much flavor, it comes out softer, and better for sandwiches and burgers! I usually add some fresh rosemary and it’s great! Or I add caraway seeds and make Paleo Rye Bread! Check out the recipe:

Nice blog! Heard of Paleo from a friend and wanted to check it out, and I found this! Adding it to my favourites as we speak! I donnot know if you are aware of the fake breads made out of basically eggs and psyllium seed husks? Some add Philladelphia-cheese as well, but I don’t know if that is allowed in Paleo. They are a bit fluffy, but there are other recipes out there which are more like real bread.
I am absolutely in love with this idea! It’s fabulous! I think I would eat 5 “sandwiches”!

I just tried making the portobello mushrooms, and all of their water came out of them… causing a bunch of liquid on the plate, and I ended up not being able to make the sandwich. :[ Any tips?

Ok so my husband and I are back on the paleo wagon… almost 100%… but I cheated a bit on this, I added 1 teaspoon of feta and reheated the chicken in the pan with some pesto… but OMG!!! SOOOO GOOD!!!! Thank you for all your recipes.
