Ginger Beef with Mango Salsa

Ginger Beef

As mentioned in a previous post, I am currently the June featured chef for US Wellness Meats! Below is one of the recipes that I shared with them for their site and the beef from US Wellness Meats was out of this world tender and delicious! 

Ginger Beef with Mango Salsa

2 beef inside skirt steaks (2 lbs of steak)

Lettuce leaves

Marinade

¼ cup coconut aminos or wheat free tamari

1 tablespoon Thai fish sauce

1 teaspoon fresh grated ginger

Big pinch of cayenne pepper

Black pepper to taste

Mango Salsa

1 cup green mango, finely diced

1/2 small red onion, thinly sliced

1 avocado, finely diced

1/3 cup cilantro leaves, finely diced

½ teaspoon freshly grated ginger

1 teaspoon garlic powder

1 tablespoon fresh squeezed lime juice

2 tablespoons olive oil

Whisk all marinade ingredients together.  Cut each steak into three even pieces and toss in the marinade until all steaks are well coated.  Let the steaks sit in the marinade at room temperature for 20 minutes and then grill for 1-2 minutes on each side. Remove the steak from the grill and let it rest for 10 minutes or while you prepare the mango salsa.

In a medium sized mixing bowl, gently toss together all the mango salsa ingredients and set aside.   Thinly slice the grilled steak into strips.

To serve, place a few lettuce leaves on each plate, top with a serving of steak strips and finish with a large scoop of the mango salsa.

Serves 5-6.

    This looks fantastic! I just happen to have everything on hand except the fish sauce, so I think I’ll definitely have to try this tomorrow.

    What would you recommend as a good substitute for the beef in this recipe? I have a red meat intolerance and usually substitute with chicken for most beef meals, but I wondered if you had a good recommendation. I absolutely love your stuff! Thank you!

      I think chicken would actually be a great sub for this recipe! A white fish would be awesome too, or shrimp. : )

      The second time I made this dish (it’s amazing, btw), I was on a 2 week RV trip and my pantry supplies were limited. We just marinated the steak in lime juice and that was plenty good enough. The salsa (and extra rare-ness of the steak 😉 is what makes this dish DIVINE.

    I was a silly and marinated the steak all day – this made it way too salty for me personally but the boy really liked it. I left the meat extra rare and served it over cauliflower rice. The mango salsa is DIVINE!! Thank you!

    WOW! Sarah, your recipes continue to amaze me. Luckily, I have a Food Saver which marinated the meat very fast. I purchased Grass Fed Flat Steak. Just took a bite and almost shed a tear…..so DELICIOUS!! Thank you thank you for making Paleo easy.

    Yummy! I was excited and nervous to try this recipe because in the past I have never had luck cooking this cut of meat, but I went for it and it turned good! Loved the mango salsa! Want to try this with chicken next. Thank you for a great recipe!
