Quick Curry Soup

I made this soup in a pinch for lunch the other day when I was down to my last couple pounds of ground beef and a few cans of coconut milk.  Some of my favorite dishes evolve out of the meager offerings of what’s left in the fridge!

Quick Curry Soup

1 yellow onion diced

3 zucchini squash halved and sliced

2 lbs grass fed ground beef

2 tsp crushed garlic or 6 minced garlic cloves

4 tbsp curry powder

1 tsp ground turmeric

1 tsp ground cumin

1 tsp cinnamon

2 tsp ground ginger

2 cans coconut milk

2 tbsp coconut oil

Chopped cilantro

Saute the onions in the coconut oil until tender, add the ground beef and brown.  Add all the spices to the ground beef and onion mixture and stir well.  Pour in the coconut  milk and add the sliced zucchini.  Bring the soup to a simmer and let it cook for about 5 – 7 minutes or until the zucchini are tender but not too mushy.  Serve with a little chopped cilantro for garnish.

    Whoo hoo! This soup hit the spot! I was in the mood for chilli but randomly found your site and this recipe. I used ground lamb instead of beef and added advacdo along with the cilantro as garnish. So good. I really like your site and thanks for all your work and sharing your paleo recipies! Best Wishes.

    This recipe was quick and easy! Great for a Paleo beginner like myself. Instead of using the zucchini I added red and yellow peppers. Thank you for your great recipes!

    I really LOVE your recipe. I am transitioning into eating Paleo (want to be successful so I need to take babysteps). I just started crossfit and I am enjoying it so far. I love your recipes.     Wow…this was absolutely delicious. I’m 25 years old but I can count on one hand how many times I’ve had zucchini (my family is from an island in the Caribbean that doesn’t usually utilize this delightful veggie). You’ve definitely got a fan now!

    This was so good! I made it with chicken and carrots, over top of cauliflower rice, but I’ll try it next time with beef.
