Also, I have attached a few pictures of Jaden’s new environmentally friendly lunch box with more lunch ideas included. Thanks to suggestions from several of Everyday Paleo’s awesome blog readers, I had several great brand options to choose from and we decided to go with Planet Box. Jaden LOVES his lunch box and his friends at school are now intrigued by what I pack for him and always want a bite!! Pretty cool way to spread the love for real food – packaged in a crazy cool lunch box….
New Lunch Ideas:
Deviled Eggs (for a twist on the classic, process the yolks with a bunch of sun dried tomatoes, olive oil, garlic powder, and black pepper)
Sliced Jicama with Baba Ganoush
3 tbsp olive oil
juice from 1/2 a lemon
3 tbsp parsley
½ tbsp balsamic vinegar
pinch of sea salt
Pre-heat oven to 425. Prick eggplant all over with a fork and bake on a foil lined cookie sheet for 40 minutes. Scoop out the insides of the eggplant and process together in a food processor with the remaining ingredients.

Sliced Raw Zucchini

Nice Baba Ganoush recipe — I like mine mixed with a bit of sesame seed tahini from Trader Joe’s but I’m not sure if that could be considered truly Paleo. I have a gas stove so I like to char my eggplant over the flame — it cooks the eggplant while imparting a wonderful smoky flavor to the baba ganoush — Removing the charred skin is messy but well worth it.
I found out it doesn’t work with propane gas stoves though, because they burn at a much higher heat than natural gas so the skin chars black but the eggplant doesn’t have time to cook through.

My wife and I were just looking at lunch containers/carriers just like Planet Green. Thanks for showing their info. off. While pricey, we are looking to ditch our plastic stuff, especially since both kids are not in school and i work in one.

I can’t wait to try the eggs in the morning. I’ve been using the PlanetBox since school began. My Preschooler loves it. Lunch is usually all gone. I usually add a treat in the tiny center area. Treat is fruit leather cut in a shape or a sticker. Thanks again!

I also use my gas stove top to charbroil red peppers — I have a metal, wok shaped basket with holes it it and I place the peppers in the basket over the gas flame and turn them as the skin bubbles and chars. Choose fairly smooth peppers as the flames don’t penetrate the crevasces very well. Once they cool enough to handle you can lift/peel the skin off with a knife and then open them up to remove the seeds. Be very careful to save the juice — it is like nectar from the gods. You can save the peppers for a few days in the fridge and they develop a syrup like nectar that tastes great in just about anything. I frequently find myself eating the strips of smoky red pepper just plain — soo much yummier than oven roasted red peppers. An added bonus is that the whole kitchen smells wonderful as the peppers (or eggplants)roast over the flame — redolent of a sweet smelling campfire in the woods.

Lovely lunch! I have to try your version of deviled eggs. My little one was asking for some and I usually wait till my SIL makes them instead.
Planet box looks really nice, but it means a commitment to a cold lunch :(. Perhaps there is a fortune to be made in designing one into a hot/cold frame, so the little guy can have something hot in his belly along with something cool.

Thank you for your baba ganoush recipe! I had an eggplant just sitting in my fridge from my CSA share that I had no clue what to do with it. Without your recipe, it probably would have rotted. 😉
