Fast Shrimp

I was so lucky to be at Robb Wolf’s Paleo Solution Seminar today, right here in Chico, CA! I met a wonderful group of people and of course the highlight being Robb’s seminar and hearing him make a whole lot of sense about this Paleo “Thang” (as Robb put it…)! After returning home to some hungry kids and a husband who so sweetly arranged a date night for us, I made some Fast Shrimp for the boys.  Actually, Jaden was really the one who did all the hard labor!  The point of this post is simple; good food, paleo food, can be fast food, right in the comfort of your own kitchen.  With simple ingredients and a bit of creativity you can make quality scrumptious meals without hardly even trying… This one took as about 10 minutes to put together.

Fast Shrimp

Ingredients

  • 1 lb Wild Caught Argentinian Red Shrimp or other shrimp of your choice I found mine at Trader Joe’s in the freezer section, raw, tails removed and de-veined
  • 1 bag frozen roasted red bell peppers and onions from Trader Joes or 1 bell pepper diced and 1/2 yellow onion diced
  • 4 big hand fulls of baby spinach leaves
  • 2 tablespoons coconut oil
  • 2 tablespoons coconut milk
  • 1/2 tablespoon curry powder or more to taste
  • Sea salt and black pepper to taste

Instructions

  1. In a large skillet, heat the coconut oil over medium heat. Add the onions and bell peppers and cook until defrosted and sizzling if using the frozen or until the veggies become tender if using fresh. Add the shrimp and the spinach and cook for 3-4 minutes or until the shrimp curls up and is no longer opaque in the middle. Add the coconut milk and spices, mix well and serve! Serves 3-4. Delicious, fast, no fuss. As Rowan said, “Good Shrimpies!”

    This looks so good and I am definitely going to pick up the ingredients to make this. I have been itching for something different to eat. Question-is coconut milk in this recipe in the can (thick and creamy) or can it be from the 1/2 gallon milk carton (less creamy and thick)?

    Thanks for a great recipe Sarah. I have been following your blog and I am loving the recipes. I am new to paleo and bringing my 14 year-old daughter with me! She is seeing the difference when she eats clean as opposed to the typical teenage junk. She loves curry so she added more to her bowl. I also used Swiss Chard instead of spinach (it was my new veggie to try this week.) I used one whole onion and one red pepper along with the Swiss Chard. I also had a bag of frozen scallops so I used them instead of shrimp. We loved it and equally important I have enough for lunch tomorrow. I also went to Amazon and asked for your book on Kindle.

      This dish serves 3-4 adults. Sorry for forgetting that, I just added it to the post. I do not post calories, it would make me crazy! LOL!! I will try to remember from now on to make sure I add how many the dish will serve. Ideally for people who are wondering about actual serving size, that’s really kind of up to you. If you like parameters make sure you eat around 1g of protein per lb of body weight at each meal, eat tons of veggies, and a little bit of fat. If you feel hungry soon after a meal, eat more protein and a bit more fat! It’s really hard to overeat on paleo food so eat a sensible size of protein, a bunch of veggies, and a bit of fat and you are most likely good to go. Hope that helps!

    Yep I would like to follow on from that question about canned coconut cream and ask if canned stuff is indeed paleo at all? We have been eating it, but someone commented to me that it was dead food, with no enzymes and that all canned food is a no go. What is your take on this Sarah?

      I have noticed huge improvement in my health since adding more coconut milk and coconut oil to my diet. It’s a great source of fat and although I personally have not done a lab test on canned coconut milk to see if it’s “dead food” I sure do feel good eating it, and that’s good enough for me! I think as long as you are eating a varied diet and not relying only on one source for you fat intake, you are covering all of your bases. Canned coconut milk also tastes really darn good and I’ll take some dead coconut milk (if that is what it is) on my veggies and chicken over a box of hamburger helper any day of the week. LOL! I hope that helps!

      Turmeric, coriander, cumin, cinnamon, cardamom, ginger, and black pepper are some of the basic curry ingredients. : )

  23. MMMM, Delish! I just ate this. I added more coconut milk (6T total) so I could have more sauce. I put in a 10 oz bag of spinach, (which works out to about 4 big handfuls) I thought it was going to be too much spinach but it was perfect. Thanks for the work that you do.

      You could always try some garlic, coriander, cumin and some sea salt and top it with cilantro!

    Will this dish freeze well? I am trying to help a friend make some Paleo meals on the weekend and be able to cook them during the week.

      I have never tried to freeze this dish and would probably suggest not to freeze this one because I have found that freezing already cooked seafood and then reheating tends to leave it kind of rubbery.

    This recipe is to die for. It’s my go to meal when I’m in a hurry and the DS loves it. I’ve made it every which way; right now my favorite is to use lobster tails (also from TJ shrimp section) and add a little heat in the form of pepper flakes or actual peppers. Thanks for the recipe. It competes with Chris Kresser’s Chicken Jerk recipe and that one takes a long time to assemble and plan for. I would love to get your cookbook.

  39. Made this tonight for dinner and it was delish! I didn’t have peppers so I used mushrooms and kale instead of spinach. My one-year old finally ate shrimp so I was super excited that I gave this one a try 🙂 You always seem to come to the rescue (and it helps that I have the necessary ingredients)!

  42. Tonight we made this for dinner substituting hatch chilies, since they just came in season! I also didn’t use coconut milk. We’re out, so I mixed 1T coconut butter 2-3T water and achieved much the same effect. Delicious!!! Thank you for sharing.

  43. What do you think about substituting the Mae Ploy curry paste you mention in your thai curry recipe for the the curry powder you call for in this one? think that would work ok?

    This was absolutely delicious!! Flavors were really good. It was my first time cooking with coconut milk and oil. Bought all ingredients at Trader Joes. Very easy recipe to follow. The only thing I would add is, after defrosting the shrimp, I would coat in salt, pepper, and garlic powder before cooking. Thanks for the recipe! Will definitely be making this again!! I am sharing with all my fellow paleo friends 🙂

    This was my first recipe to try of yours and it was so EASY and so good! We finally got a Trader Joe’s in Dallas, it was my first time ever to a TJ’s. The shrimp I bought frozen at Sam’s Club- $14 for 2lb bag, medium sz. shrimp. Bought from TJ’s: (1) frozen bag of onion/pepper mix, (1) 6oz bag of fresh organic baby spinach (had 5 big handfuls so just used the whole bag up), and 1 can of light coconut milk (put in plastic bottle and froze the rest to save for later recipes)- less than $6. First time cooking with coconut oil (except for cookies) and coconut milk. Didn’t have curry spice- forgot to get at store. So I used a little garlic instead. IT WAS SO GOOD- JUST LIKE YOU’D BUY IN A RESTAURANT….only I know EXACTLY what is in it. I think I’d probably serve with a little brown rice for the kids….that is, IF there is any left once they come back from dad’s. For sure a favorite, and I will DEFINITELY be checking out your other recipes- can’t wait to try more. Just read “THE SCIENCE OF SKINNY”- which explains the how/why behind sugar and flour and everything showing why it is so bad for us, and everything else in between…basically, WHAT we need to eat and how we need to eat- ie: a “non-processed diet” or “paleo lifestyle”. It’s an EXCELLENT book and so easy to read, you’ll be eating clean after reading this book if you weren’t before. It even breaks down all the different types of sugars, sweeteners, etc and just explains everything so well. Highly recommend for anyone that wants an awesome, thorough, but easy to understand explanation of what is actually healthy and what’s not. I haven’t found a better book out there with all this info in such an easy to read format!!
