The Fast Fix….

Over the years I have humbly learned a couple things about making paleo work for a family. One big lesson is accepting that in order to eat paleo, you simply have to cook.  Another big realization: Even when it feels as if there is no time left in the day, the reality is that a delicious and healthy paleo meal can be only minutes away. I used to justify ordering pizza or dragging the kids out to dinner because I work hard all day, so why would I want to make dinner?  Eating paleo has helped me come to appreciate the time I spend in the kitchen because I spend more time with my family, and the end result is the best reward.  There is nothing like sitting down together at the dinner table to bring us all together, and it’s truly worth the effort.  Another big lesson: When I am in a huge hurry or feeling burnt out, I ask for help.  Even little kids can pitch in and when I have one or all of my kids in the kitchen helping out, the task of cooking for the family turns into fun, and I get the help I need!

This is one of our “fast fix” favorites that was invented by one of the most unlikely cooks I know, Andy D. of Norcal. All of the trainers have taken and adapted his idea and now we all have our own favorite versions.  Here’s ours:

Meat, Veggies, and Coconut Milk…

1 lb Italian pork sausage

1 lb medium sized cooked shrimp tails removed (we used already cooked frozen shrimp which we just defrosted quickly under cold running water)

2 zucchini squash sliced

2 Japanese eggplants sliced

1 small red and yellow bell pepper diced

1/2 can coconut milk

Black pepper to taste.

In a large soup pot brown the Italian sausage over medium heat.  While the sausage is browning, defrost your shrimp (if using frozen) in a colander under cold running water and chop your vegetables.  After the sausage is browned, add the diced vegetables and saute with the sausage for about 5 minutes.  Pour in the coconut milk and bring to a simmer.  Add the defrosted shrimp and cook for about 2 more minutes, just until the shrimp are warm.  Season with black pepper and serve in bowls.

    I love your posts and am excited for you to publish that book 🙂 It’s such a great way for people to see that Paleo eating is actually quite varied and fun, not to mention delicious.
    I completely agree that you really just have to take some time for cooking to truly eat Paleo. I have slowly brought my mother and younger sister into the Paleo world and I think a lot of it has come from my cooking for them at home.
    Anyway, can’t wait to try this recipe out this week.

  6. I made this as well for lunches, but I didn’t have some of the eggplant, so instead used snow peas, and added mushrooms. It turned out fabulous!! I agree with Tom, Thanks and keep them coming, Sarah!

  7. i threw some red curry paste in this as well (not sure if it’s paleo but it seemed to be ok and it was definitely delicious!)

    Might want to read the label on your Chao Koh brand coconut milk though 🙂 There may be stabilisers and preservatives.

    Do you guys have Ayam Brand coconut milk or cream there? These are 100% coconut in the case of the cream and a mixture of coconut + water for the milk.
