Anything “slaw” is right up my alley and this salad was slaw-de-licious. I was inspired to make this salad by a recipe sent to me by Michele L. who you might remember from this previous post. I hope you enjoy!
Chicken Jicama Slaw
3 cups cooked chicken, diced (we used a rotisserie chicken)
2 cups broccoli slaw
½ cup cucumber, diced
1/2 small red onion, finely diced
1 cup diced jicama
½ cup paleo mayo
1 tablespoon balsamic vinegar
1 tsp paprika
½ tsp chili powder
pinch of cayenne pepper
Mix all ingredients together and enjoy! Serves 4 adults. We ate our salad with a butternut squash cooked in the pressure cooker for 10 minutes.
Enjoy!

I’ve tried Jicama a few times but never really got a taste for it; this looks really good however.
I loved this recipe but I have trouble with the mayo. Does anyone have any suggestions for a way to make a more mild mayo? I love EVOO in moderation but whenever I make a paleo mayo, the flavor of the EVOO just comes through faaarrrr too much.
Melissa, author of Well Fed (http://www.theclothesmakethegirl.com/) suggests using the Light Olive Oil, not the Extra Virgin. She says she just buys the store brand cheapo stuff.
Just starting out with the whole paleo diet and we made this dish. It was AWESOME!! We also made the Spaghetti Squash and we loved that too. Can’t wait to order your book.

We are trying a 30 day challenge (starting tomorrow!) and just put this together for our lunches for the next 2-3 days. I never realized how easy it is to make mayonnaise! And this recipe is fantastic and tasty! Now I just have to decide what to try next!!

Hi Sue! Broccoli slaw is just shredded up broccoli, carrots, and cabbage. I but an organic already shredded broccoli slaw from Trader Joe’s but I have also seen it at major grocery stores. There is no dressing that comes with it, just the shredded veggies so you can do whatever you want to with it!
Very excited about trying this recipe today! I’ve been eating clean on and off for a year and now and New Year’s has me geared up to stick with it. I am constantly trying to find new and exciting recipes to keep things from getting boring and love reading your blog.

I don’t really follow paleo, but follow wheat belly. And I loved this, I added sliced almonds to it and left out the jicama as it is not readily available in North Dakota. Still, what a slam dunk for a healthy low carb dinner!

strictly speaking, this is not paleo at all.. you are putting 4 ingredients not allowed by paleo diet.
1 tablespoon balsamic vinegar
1 tsp paprika
½ tsp chili powder
pinch of cayenne pepper
vinegar is fermented
paprika, chili and cayenne pepper are belonged to nightshade group.
Thank you for posting this recipe. I just had dinner made and on the table in less than a half hour and for around $10….winning!
