Chicken Chili Soup

I must say, this soup was a huge success! So good in fact that the leftovers I imagined enjoying today were gone in a flash as I watched the last bits of soup being scraped from the bottom of the pot. I’m not sure what the heck I’m going to do as my boys continue to grow, and eat, and eat, and grow and holy cow – it’s crazy how much food these creatures consume! If I had a dollar for every time I heard the words, “I’m hungry” well – you get the picture. So, the moral of the story is, if you have as many hungry mouths to feed as I do, or if you make this over the weekend and want plenty of leftovers to get you through another busy week, double this recipe!!

Chicken Chili Soup

Chicken Chili Soup

3 cups chicken breast, cooked and chopped (I used leftover grilled chicken breast)

1 onion, diced

4 garlic cloves, minced

1 jalapeno or Fresno pepper, seeds removed and finely diced

2 – 4 oz cans of diced green chilis

4 cups chicken broth

2 tbsps olive oil

2 tsps ground cumin

1 tablespoon dried oregano

1/4 teaspoon cayenne pepper

Black pepper to taste

Fresh cilantro, diced

Avocado, diced

In a large soup pan, sauté the onion, garlic, and jalapeno together in the olive oil until the onions are tender. Add the canned green chilis, cumin, oregano, cayenne pepper and black pepper. Stir together and add the chicken broth. Bring to a boil, turn down to medium low, and simmer for 10 minutes. Add the chicken and cook for another 5 minutes. Serve with fresh cilantro and avocado.

    I made a version of this last week and it was delicious!! For my chicken chili I used chicken thighs. I put everything in the crockpot over night and by the morning the chicken was so tender that it fell apart while I was stirring it. The best part was that it cooked while I slept!

      Hi Karen, just a touch of heat, not too spicy! If you like it mild, use half the jalapeno and that should do the trick. : )

    I’m glad you mentioned doubling the recipe as I have three growing boys myself. My two five year olds must be going through a growth spurt this week as I cannot seem to keep up with them!     I am gonna try this but I dont eat nightshades so all those (peppers, chilis, and cayenne) will be eliminated. Maybe I will add in a bunch of chopped cilantro to give it more flavor. Thoughts?

    Hi Sarena,
    I think added more cilantro will be good, maybe some extra cumin, and some lime juice? I think it will still be pretty tasty, let me know how it turns out! You can also add more veggies like carrots, zucchini and cabbage to make it more of a vegetable chicken soup. : )

    Made this tonight. I doubled the recipe for lunches but I don’t know how much will be left! I left the cayenne out and used vegetable broth. it’s really good!

    So last night my husband and I were invited to a gathering where the offerings would be limited (think: pizza & soda). I packed my own back up meal, but hubby was planning to stop by somewhere on the way to fill up before the party. We couldn’t think of anywhere to stop and finally he said, “Isn’t there an EverydayPaleo Restaurant somewhere we could find??”
    So there you have it! He knows how much I love your blog/recipes and if you opened a restaurant we would both be there will bells on!

    this sounds amazing.
    a very cold day in Maine and I think this is the perfect way to warm up!

    Made this with leftover turkey tonight and it was great! Didn’t have a can a chiles so used jar of sugar free green chili salsa. Cut the spices in half and it was perfect for us! Oh and we served it over cauliflower mash.

    Easy, easy, easy! LOVE this soup. I did add the chilis, but left out the hot peppers. I also added some diced tomatoes to my version, about 1/2 can. The diced chilis totally made the flavor of the soup PERFECT, just enough heat and a ton of flavor. This is the second soup of yours I love, the caribbean seafood stew was awesome. Thanks as always for your recipes.

    I made this evening for an impromptu dinner with some non-paleo eating friends. I added diced carrots, green and red peppers, and mushrooms. They loved and could hardly believe that something that tasted so good was Paleo. I told them I only eat yummy food. 🙂

    I made this Chicken Chili soup today and husbund said it was the best soup he has every ate , so thumbs up with this one , the only thing I did different was add a can chipolite corn , it was very good and tasty, I will make again

    Hey sarah!
    Just a quick question about chickens. I’ve got my first organic chicken and it’s still got the gross bits left inside it? Do you know what I can do with them? Can i fry the livers? There are also some long things (look a bit like meat covered bones). Can i put them in my stock?

You can do this with those gross bits if you want to: http://girlgoneprimal.blogspot.com/2010/03/recipe-chicken-liver-pate.html or toss them into your stock as well as long as you don’t mind the liver flavor and the long thing is the neck and yes for sure put that into your chicken stock! : )

    I convinced another Paleo friend to try one recipe a week from this site. We are both single and so we each make a recipe a week and share half with the other person. She made this and I ate it today for lunch. DELICIOUS. Everyone around me eating fast food wanted to know what it was because it smelled SO good. Fantastic.

    This was SO good, I mean packed with flavor! Passed the kid test (although my kids will eat anything). Only tweak I made was that I had some tomatillos that i roasted and chopped into the soup. Love your recipes!

    This was great. I didn’t put the avocado in it. But I added a can of diced tomatoes that had green peppers and onions in it. and also use garlic power instead and it was a great hit.

    This is awesome! I have made it at least 20 times, really. The only thing I do differently is add more cumin, which I love.

    This is great! I’m not new to Paleo but this is the first I’ve stuck with it strictly. Used purple onion istead of white and ground Turkey instead of chicken (I eat a ton of chicken so wanted to change it up). Still turned out amazing! Thanks so much!!!

    I cook a lot, and (have been told by many) I’m a great cook. That being said, this is a phenomenal SIMPLE & EASY recipe. I made it within 30 minutes before my evening class. My boyfriend came back from work and texted this: “Soup is AMAZING! I’m gonna need discipline to keep my portions low.” He had 1.7 bowls of it by the time I got home…and had another bowl late at night. In conclusion, THANK YOU!! I don’t make many dishes twice, but this one I will be. And sharing!
